What an adorable mouse! In the morning, I raised my spirits, thanks!
NataliaVoronezh
Brewed tea in the morning, rich color, taste with a light fruity note. I really liked it! I ought to collect more leaves and make another batch of tea, and I also want to make a rustic one! I really liked this thing !!!!!
Elena Kadiewa
Natasha, I don’t like to brew fresh, only matured.
NataliaVoronezh
Flax, I'm on trial, it is still hanging "aired", and I have to finish the one I bought.

Good day!
I have been drinking Ivan tea for a long time, but I managed to prepare it myself only recently. This year we came to my mother and I made my first portions of tea
Of course, I remembered this case a little late, but something worked out.
All discussions could not be read - there are too many of them
I have a couple of questions.
1. Tell me, how do you sort the leaves before withering? It takes me a lot of time, I examine almost everyone. And what are the selection criteria? Is it possible, for example, to leave leaves that the caterpillars a little bit gnawed? Or tear off the slightly dried ends, and leave the rest of the sheet (I did this sometimes)?
It's just that a lot of what has been collected is thrown away, it's a pity ...
2. And still wondering who collects garden leaves? After all, since Ivanushka will not work from the branch in one fell swoop, each must be plucked. I tried with pruning shears, but it still takes a long time.

It's nice to find so many good people. So, I come to you, take

naturalife, Vera, welcome to the Tea Club. From Rostov-on-Don itself, and where did Ivan-tea come from?

Added on Tuesday 19 Jul 2016 09:56 am

Vera, I already wrote here that I shorten the shoots of trees with pruning shears, this is for their benefit; and for me tea. I spread the oilcloth and put it on it, and in the house I cut the leaves under the split. So faster than cutting each leaf from the tree.
Yanka
naturalife, Vera, hello! For the first time I practically did not choose, the tops were good, so, I noticed a few leaves, threw them away, so I quickly sniffed. But yesterday I collected it from another place, it is much worse there, and I fiddled longer, and there was more waste, but also without fanaticism, it would still be fried and dried.

And garden ones - by leaf, yes. For a long time ... and to do a shop ...

You will laugh, but we have store-bought black tea for more than a year! Elite! And does not pull ... to finish drinking!

Vera, I pick off all garden nails. Therefore, I have the same "manicure"! If someone gave the leaves (dream!), Then, usually, with legs. Then I sit and cut off each one with small nippers.
Despite the laboriousness, I will not give up making tea! It is a pity that Ivanchi, like some of them, is not, of course. But, and garden ones are worthy to be called tea!
Julio
I greet everyone with special joy!
I have been doing Ivan for the second time, for the second year. I carefully studied all the presented material, and everything turned out right away !!! Many thanks to the author of the recipe !!! The only thing I regret is that I got LITTLE leaves !!! With a very economical consumption of two liters of finished tea, it was only enough until the New Year ...
Nonicha - not like just now. Nonicha took three sacks of leaves. I coped with one, dried it already (I walk around the bag, sniff, drool ...). But with the two remaining bags, I'm afraid my oven will not cope ... But it has already wilted! .. It's time to turn it on and on! ..
So, QUESTION !!! What are they doing with the leaves and the refrigerator? ..Would you give me a link with the answer, mmm? .. I would be very grateful !!!
.
.
.
A-atboy !!! I found it myself.
Who needs an answer -

PLEASE READ THE RECIPE CAREFULLY !!!

In my case, wrap it in a cloth and simply put it in the refrigerator for a day or two.
I went to wrap it up.
Seberia
Today I was spinning as part of a mix (apple-pear-cherry-ivanushka) yesterday's frozen ivan-tea. There was no excess moisture at all. Perfectly frozen leaves! Everything scrolled perfectly. Truth froze in a towel just in case.

Let's not laugh - I myself am a tea master, before I could not live without camellia sinensis, moreover, all my tea was good, not cheap. And two years ago, during pregnancy, I began to drink Ivanushka. And after a while I tried to drink my favorite Chinese tea before ... and couldn't ... After a while I tried again. And no more
I gave all my supplies to a friend and now I drink only our NATIVE
But now I will also do it myself

Collected in the Penza region. For a long time I could not find him in our area. Now the field was mowed, now it is quite a bit, now it is already quite old. But recently I found a place where there is enough of it. And, despite the fact that it is already pushing in some places, I managed to choose. I made a sheet, and a little granules, and a fluffy Now, I want to try with cherries.
francevna
naturalife, Vera, I thought that Ivan-tea was found in the Rostov region.

I also sniff the garden ones, but not in my garden, but in abandoned ones, it does not harm the trees, they become fluffier. I don’t cut off the legs of cherries and apples and pears, I twist them with them, I cut off the legs of raspberries, maybe they’re thick ...
I remove completely dried leaves and snails from Ivan's tea ...
Mila1
So I also have fireweed without fanaticism ... I cleanly clean up the spoiled ones, and each of the garden leaves we sort out with my husband, cut off the leg
Elena Kadiewa
I also sort out Ivanushka without fanaticism, at the very beginning of our "tea madness" we discussed a lot - wash, not wash, what to clean ...
Seberia
I am fingering Ivanushka while I wither. I stir up and at the same time choose blades of grass, yellow leaves, spoiled. And when I scroll, I also select all the substandard that is still left. All the same, small batches can be put in a meat grinder, everything is visible.
naturalife
I would like to separately thank Lyudmila lappl1 for such a detailed master class!
It is valuable first of all because a person has shared his own experience, and not a theory.
I had a lot of bookmarks on the topic of making gulls, but I stopped on this one, and at first I checked it all the time.
And then I began to read the comments, I looked - and there are so many sincere people living here
Radushka
naturalife, Vera, well, for sure there are some developments. Can't you share with otherssick? Everyone is like this

So far with tea a little, I just used to be bread without yeast baked, so I just feel such processes
I like loose leaf tea more, both to drink and to do. From the process just bastard!
Made granular just for the sake of trial and because of the fluff
The first batch was fermented for 3-4 hours, and it seemed to me a little. The next one was about a day, it seems, and this one was the most successful!
Mom said that the smell of honey
(My son and I are just visiting mom now)
Then I also tried to do solar fermentation in a bag. Not bad, but the one that smelled like honey is better
And another one fermented for me, probably for more than a day and a half. There was very little of it, for the sake of experiment. At first I wanted to make a compressed cake out of it, but I never found the technology for this. Then she pulled it out and put it to dry in the sun. Now I brewed it to try. Firstly, what I noticed was that after drying there were some dots on it, which are not in other batches. Maybe stopped ??? And when brewing, at first, a not very pleasant smell, which almost immediately passed. It seems you can drink, but it's kind of muddy, and you can't call it a masterpiece. So, I do not recommend doing this.
Radushka
naturalife, Vera, yes everyone here has a girl's memory, do not worry! I'm writing it down, but all the same ... not that, so different ... will be forgotten! It doesn't shine for me to make a fluffy, in principle ... here I scored 36 grams of leaves! What I'm insanely proud of!
naturalife
Well, I edited the post and moved about the fluffy to the appropriate topic.

Hello to all lovers of this magic! My last batch this year turned out to be bitter. Considering that I like to brew for 1-3 hours, or even for the whole night with a bathhouse (wrapping the kettle). And from morning to drink or cold or slightly warming up. I experimented: I collected the leaf at the very end of flowering, before pushing, I tried to take the leaf "not beaten", dried it as usual, twisted large sausages into sausages as always with a force "to the point of stupidity", fermented less than usual, cut 15 ml into washers. YES, I collected the color and immediately mixed it with the leaf, that is, it was fermented and dried in the dryer together for 24 hours. In this state, many people like it, but for me the Chinese bitter taste harassed. Now I'll try to put some photo ... xs how to do it
francevna
Citizen, the photo must first be inserted into the profile in "my gallery"

sorry for the stupidity, but where is she "my gallery"?

Well, here I am in tea-makers sideways

The first batch of medium fermentation is already in the jar, the second, strong, until dry. The first one, unable to bear it, tested it immediately after finishing drying - it was sour, a little tea and a little herbal. Brewed today - no longer sour, does not poison, more like tea, but some kind of specific tea. Fragrant. I already like.

Girls, this is a little strange question: should the tea steam? When I did the first batch, I did not notice this. Today I land the second. Hovering clearly. Is the layer thick (I have 1.5 - 2 cm) or is the tea very "wet"? Dried for a day in a sheet.

Added Wednesday 20 Jul 2016 12:33 pm

I forgot to add, I spent the night in the freezer, then passed it through a meat grinder. The mass, of course, was smoother than hand kneading.

Is this white "smoke"? I fry in a skillet. Layer 1-2 cm. Waiting for this white smoke. Then I stir for 3-4 minutes ("smokes") and pour on a tray - dry for 2-4 days in the shade (in the wall behind the glass for a cat). Or I stir for 1-2 minutes, turn off the gas and leave in a frying pan, stirring occasionally for another 10 minutes.
I know that the technology is ruined, but I can't use the oven in this heat, and even for hours.
mironirina
lily_a, no, not smoke, but steam. Not in clubs, of course, but there is a park. So I wonder if this is a mistake? If so, where did it come from? Probably, the layer is thick after all. Looking forward to hearing from our tea guru.

Steam from moisture, of course.
Yanka
I dry with a layer of no more than 1 cm, and I also had a steam in a few minutes after being heated to 110 grams. put the oven on. I did not attach any importance, for me - it is so natural, the moisture begins to evaporate intensively, so it soars ...

The smell of honey exists! : yes: Saturated for the whole apartment. Finally, the wanderings of recipes and technologies have brought lasting results. I decided to repeat my successful experiment in the search for a honey smell, but this result pleased even more than the previous one. (In a jar for 1 day, fermentation for 4 hours under a towel.) I went through the fresh leaves, caught all the living, went to sleep in a box. I stuffed 2 two liter jars tightly, put them under the table in the kitchen and forgot them for 1.5 days. I opened the jar, let it stand for 10 minutes, then the leaves do not break, remain intact, they darken before our eyes right in the jar. I divide the jar into 2 batches, 1 batch = 2 baking sheets. Kneaded well, the leaves became olive green. She blinded a plump bun, the bun turned out to be quite small with a palm in width and 5-6 cm in height. The gingerbread man in a plastic bag, drove the air out of the bag, covered it, or rather, wrapped it in a cloth and put it on the table. The Kolobok odor test did not pass, I went to sniff every hour, there was a barely noticeable smell, which is even impossible to understand, very weak. After 6 hours, I took out a bun, the veins at the upper leaves were colored, they became not white, but reddish, the leaves acquired a dark emerald hue. I sent it for drying and then a wonderful thick honey smell went. The tea turned out to be black, the veins of this tea are brown, unlike my other teas, where the veins are still so light and remain. Although I did not wilt the leaves, there was little liquid in the finished, after fermentation, kolobok, that is, the leaves digested all the liquid.
naturalife
Eh, I also want to try in cans, but Ivanushka is already pushing with us ...
It's great that your experience was written!
Citizen
Olga VN thank you. I still didn't understand how to insert pictures. probably useless to explain. People! Explain to me how you can harvest the leaf after flowering? He's beaten! Dry! Maggots are laid on the back! Bitter after fermentation! Or I don’t understand anything ?!

Space, you are beautiful, good question! Approximately 3-4% of the leaf. When collecting color, was bitten by a wasp. The wrist sore remarkably and the inner parts of the elbow joint itched for 2 days.

Added Thursday, 21 Jul 2016 02:44

yes, that's what ... soar ... collect the sheet in an ikeevsky bag. It is very convenient, it is on the right shoulder, it is slightly spread out in front ... I make my way forward through the thickets, pluck it, throw it into the spread out pocket in front, trying not to damage the plants ... at the same time I manage to cut off the penetrating cow parsnip with a knife, which is getting bigger and bigger every year ... Yes, to soar, I forgot, and so: after collecting a full bag, I come home (well, km 35), thrusting my hand into the middle of the mash of leaves ... you can fry eggs. In my gut I understand that the withering process began FROM NATURE !!! But, stupidly I begin to sort out from snails, mating cockroaches, tiny, fast-running spiders, laid eggs ..................... ...........
Elena Kadiewa
Citizen, you ask, how can you collect? This is called hunting more than bondage. Try to look for new thickets of ivanushka, in the woods, in the shade. Well, not the whole leaf is as bad as you write, I collect it until the end of August, but this is my favorite tea, therefore, in the fields, forests.

Added Thursday, Jul 21, 2016 03:05 AM

mironirina, almost 50% of moisture remains in tea, so the steam also evaporates, we DRY the tea!

Added Thursday, Jul 21, 2016 03:07 AM

Semblis, Marina, but just by prescription you have not tried to make? To "dance" from this recipe and do it your way?
mironirina
Semblis, Hello! Thanks for writing about your experience! Also looking for a scent. I smell everything, I smell it, but so far I haven’t smelled anything except a light floral scent. Can I ask you a couple of questions?
"... let's go to sleep in a box" - is this withering? That is, the leaves are packed tightly into the box and, as I understand it, at night?
"Filled tightly 2 two liter cans" is fermentation, right?
"Gingerbread man in a plastic bag, kicked out the air from the bag, covered it up, or rather, wrapped it in a cloth and put it on the table" - is this the second stage of fermentation?
And the last question, was the tea dried with a whole leaf?

Added Thursday, Jul 21, 2016 07:34 AM

elena kadiewa, Lena, I understand that the moisture should evaporate, I was just scared that I would "steam" the tea. Somewhere I read a warning about this.
Citizen, yesterday my husband and I found such a cool plot on the outskirts of the forest! Tall young, clean! Take it, don't go over it! Look somewhere in the shade, there he will be younger.
I read about snails and am surprised. We have Siberia, apparently, that's why the tea is pure. At least you can bring a couple of black ants from the forest. And we never had snails.
Radushka
Here I would have Ivanushka ... I would have him with snails ... with pleasure ... Eh ...
Semblis
elena kadiewa, Lena, tried different things. Even for the first time I fermented, I waited for the smell of dried fruits ... I threw it out. In the morning I dried the leaves from the freezer, from the night I kneaded the bun, it turned out fermentation for 8 hours, the smell of apples, when drying is good, fruity. No sourness when the park is on.
mironirina, Irina, I spread the leaves on a light sheet, stir them up, choose snails, bugs. Snails and spiders went to sleep in the box. I do not wither, I fill the jar very tightly with fresh leaves, I closed it tightly with a lid. This is the 1st frementation for 1.5 days. The gingerbread man in a bag is the 2nd fermentation. I cut the gingerbread man into pieces of 1.5 - 2 cm, divide into 2 baking sheets. Thoroughly disassemble all stuck together pieces, shake right on the baking sheet.
Now I made two batches from 2.5 daily jars. The leaves are very well punctured, quickly, evenly colored in olive color, the smell is not very pleasant, but not silage. I kneaded the koloboks, they are wrapped in cloths in bags, I will write off the results in the evening. Maybe 2.5 days and a bit too much ... we'll see, we'll smell)))))
mironirina
Radushka, come to us, to Transbaikalia! There is a lot of Ivan-tea here!
Julio
mironirina, for sure, in the shade the leaves are excellent! Yesterday I stripped a wonderful thicket in the shade! It is already fluffing in the sun, but in the shade the buds are just pupating!
