"KOREAN ZABACHOK" SALAD FOR WINTER

INGREDIENTS:

zucchini 3 kg
carrots 500 g

sugar 200 g
vegetable oil 100 g
table vinegar 9% 100 g
onion 4 heads
garlic 12 cloves
salt 2 tbsp. l.
seasoning for Korean carrots 1 pack

RECIPE:

To prepare the salad, peel and seed the zucchini and grate for Korean carrots. This only applies to old fruits with a hard skin and seeds. If the zucchini is young, it is not necessary to remove the skin.

2. Peel the carrots and grate them like zucchini, cut the onion into small cubes. Put all prepared vegetables in one bowl. Mix spices, crushed garlic, oil, vinegar and add to vegetables. Arrange the salad in sterile, half-liter jars.

3. For sterilization, take a tall saucepan and cover the bottom with a towel. Place the salad jars at the bottom of the pan and pour water to the height of the salad in the jars. Sterilize for 30 minutes. Roll up and wrap up Korean zucchini salad for the winter.

The carrots were first cut on an inclined grater from the narrow end of the vegetable, so the length is only 4 cm, if you take a thicker vegetable, then the pieces will be longer, about 5 cm.
Then the same carrot was cut lengthwise 1 time and launched through a straight channel, the pieces were cut in length equal to the diameter of the vegetable. Not a bad option if you don't want long spirals.
The thickness of the sliced ​​carrots is less than 3 mm, I think it should be considered that the nozzle itself in Travola is 3 mm.

So - she removed the outer hard layer of the pumpkin perfectly. Then I took off the white to get to the orange layer, with an ordinary cleaner (not a wavy-ribbed, but a straight blade). Old harvest pumpkin, that is worse you can't imagine more difficult work.

I tried to start spiraling immediately with the "angel hair" attachment, that is, 1 mm. It didn't work for me, because the angle was indirect. Then I remembered what I said Elena Accomplishment that if the angle is not straight, then this can significantly complicate the process. I put the 3 mm nozzle, overcame the "indirect" angle, changed the nozzle by 1 mm and everything went like clockwork.

But there are only two nozzles, 3mm and flat. Despite this, the spirals suit me completely and a different size is not required, and carrots are even better than mechanical cuts, mechanics do not always cut through, especially dry vegetables.
Having tried Travola and mechanical, I often use Travola. I left the mechanics under the cabbage and something else overall.
I bought a mechanical one from the Chinese, but it is no longer there, so I do not offer a link.
