Old Soviet knives are slowly being grinded. I'm getting ready to buy a kit. Please advise from personal experience.

AMEFA, Fiskars. Excellent steel and very comfortable handles, which is important.

I have a set of Zepter knives (in general, I am not a fan of the products of this company because of the unreasonably high prices), they were presented to the DR three years ago. They cut perfectly and today remain sharp as new. No problem in slicing meat, bread, cheese, etc.
Cat
I have had a set of the French company "Vitesse" for 3 years already - I am very satisfied, sometimes I correct them on the belt and that's it. They cut everything, including my fingers. They were sold with a stand - I threw it out, I store it on a magnetic bar on the wall - it is convenient, practical and does not take up space.
Lazy
and where in Kiev you can see and touch? Zepter, I know, there is a store, AMEFA, Fiskars, it seems like there should be in the Metro, but Vitesse? do they have a website?

Unfortunately, I don’t know the Ukrainian site.

very good and cheap tramontin knives.
there is nothing to compare with)

sold one at a time in the markets. If you take a lot - it is better in Cherkizon, there it is twice cheaper.

I saw O'key today in the knife department. Price 50-100 UAH I think that in any supermarket you can look next to the knives.

I saw the magnetic bar in the Yunost market, in small shops that sell pots, cutlery sets, etc.

Olga @, we bought our own bar (I am also from Kiev) in the Ukraine department store, there is a Berhoff brand shop. Ask the consultant, I would not have spied it myself.
We bought it two years ago, I don’t remember how much it cost, but it doesn’t seem like much

I think the best knives are Japanese "Pure Komachi". Neither Fiskars, nor Vitesse, nor, moreover, Tramontina can compare with them. Japanese ceramic ones are also very good, now we have similar ones made in Germany. The disadvantage of the former is the high price, the latter is fragility. But the sharpness is unsurpassed!
lva2410
Now the knife market is represented by a wide variety of different companies and brands.
But I believe that any self-respecting person involved in cooking should have a good set of knives. And there is no need to spare money, since this money is not thrown away. Good knives make work easier and delight the soul.
Knives must be forged. I have had knives from Solingen Germany for 5 years. The series is called Henckels. During my life I have tried many knives, but I didn’t have any better knives.
I bought it in a company store, but not in a set. Because the sets are mostly durat. I just typed everything I needed in the catalog. I chose 7 knives, scissors, musat and a wooden stand. Plus I also received a manicure set as a gift. His wife just drags on him. Since my wife does not know how to use musat, I also had to buy a Solingen editing of knives for dummies. For 5 years now, there have been no problems with knives.

I have Japanese "Kasumi" Damascus series.
There was also a ceramic Kasumi. Broke in the end.
If you are interested, ask.
So far I can only say that the knives are excellent. Ceramic keeps sharpening best. When I asked how often it should be sharpened, I was told that in five years you will come to the first sharpening. Moreover, I did not have time to buy a closer for him and I felt the first signs of dullness only after half a year. If I had a door closer, then the knife would be perfect for many years, without any signs there. It is a pity that they are very fragile. I dropped mine twice into the sink. The first time a piece broke off at the handle, the second time the blade shattered to smithereens.
Non-ceramic knives are also very good, but they often need to be adjusted with a closer, like all knives, only less often. But they cut so well that the product is cut almost under the weight of the knife itself. I have not yet met other such knives, although I had both Henkels and Fiskars, all the more so, etc. Although there, German knives are quite good. And Finnish people are not killed at all. The Japanese are preferable to follow. After cutting the product, wash immediately and wipe dry. Better to keep on tape.

For 6 years I have had German Zwilling Henckels knives from Solingen in a set (for meat, bread, medium universal, for cheese, for vegetables, large universal + sharpener + scissors). Satisfied awfully. The steel is amazing, the handles are comfortable, but the price is very expensive. But the miser pays twice. All the same, knives are, as a rule, for a long time. Buy and YOU for a long time.
foxtrader
Lola_Press, try the Henkels sandwich, which has a grooved blade. Super. Immediately anoint the butter on the sandwich, and cut off the cheese / tomato / meat. I have two of them. One with a rounded tip, the other in the form of a leaf and with a pointed end. They are not large and are much cheaper than large ones.
Lola_Press
foxtrader, thanks for the advice. I would try, but where to store them, there is no place in the stand. And the composition that I have completely satisfies me. I especially like a cheese knife with pointed teeth and a fork at the end. By the way, it was not included in the set, they just decided to change it when buying, because the family really loves cheese ...
foxtrader
It's not a pity to throw such people into the general box. Not that expensive. I’m still lying around. I can’t live without sandwich knives. We love to chew butters

How do you like this wonderful cake knife? They can cut a piece of the size you need from the cake and bring it to the plate without loss.

Well, here I am with knives :)) For a very long time I chose and settled on ZWILLING J.A. HENCKELS TWIN Cuisine series. I started with a chef's troika, then we bought a santoku with a wavy blade, musat and a sharpener. All! Absolute happiness))) Bread is good that I did not buy, the freshest and fluffiest chef, as butter is cut. Now there is another problem - I can't cut anything at a party, and my guests are afraid to even touch the knives. Yes, and the pets are looking with apprehension, looking for old ones in boxes
I heard about ceramic, but did not dare because of its fragility.
The Japanese were also considered.
I also bought a magnetic stand for the handsome men. It is not a bar, but a wooden stand, a plank with a magnet inside. If you wish, you can hook it to the rail, it will hang, but I just have it. I have not admired it yet, I rearrange it from place to place, touch. Maybe it's time to heal? )

Congratulations to the Lazy Girl !!! We hope that the purchase of new knives will encourage the preparation of new dishes. I know from myself that I compare all the knives of others with my own (to be honest, almost all lose to mine). Once again, congratulations.

Today I bought such a bar in Magellan at Teremki-1. I'm happy! Thanks for the idea and tip!

Thanks for the congratulations, comrades :))
Incidentally, whoever has not found the bar yet, I can give mine for half the price. I bought it, but I could not find a place to screw it. For some reason I immediately threw out the box Dimensions 380x50x20. Weighs a little over a kilogram. Manufacturer Provence.

And can you specify exactly where in Kiev you found such knives?
Lazy
Oh, this is a long story, they didn't find it in Kiev at that time, my husband brought it in parts from Switzerland and Holland. You will laugh, but they are there in an expensive boutique by their standards, cheaper than in online stores in Moscow and Kiev, not to mention just our stores. And now there is a department in Ukraine on the second floor, where bergof and yusk are. There is this series.
and on the Internet here is a store
galka
Lazy, I am now interested in the blade itself is thin? otherwise I have Berhof knives, well, in principle, they are not bad, but of course not the best option, as for me, in my opinion - the blade is thick with them, that is, the knife blade itself is made of thick steel (or what are they made of) , I would like thin knives, my mother has one, my grandfather also did it, he is already 40 years old (if not more), my father has already changed the handle, and the steel is excellent, only of course has been ground off a little, but this is excellent.
Lazy
galka
I understand what you mean. The blades are really thick. These are the rules. If the knives are of high quality forged, then they are thick. Among the forged ones, only the fillet is thin, it should be flexible.
If you want thin ones, take from expensive ones, but series made of sheet steel, they are cheaper, they are considered semi-professional, steel seems to be softer and keep sharpening worse, that is, it is necessary to sharpen more often and, accordingly, grind over time. But I doubt that they will last less than that grandfather :)))) More likely to get bored or lost
I also have everything old, Soviet thin. They are VERY convenient to cut, this is physics, but they often have to be corrected. I just have a quirk, so that the knife was like a blade, I fiddle with them myself, so my husband decided to pamper the "right" ones, as he says This choice is from the evil one, not a necessity
galka
Lazy, Wow! but I didn't know, such subtleties about knives (about the thickness of the blade), thanks for the information

Peace be with you bakers!
Back in the spring, a friend gave me a ceramic hatamoto knife!
you know it's just a fairy tale. cut like a razor and butter and ice cream
meat, and for half a year the knife was not blunt even a little bit in general !! if anyone in the selection process I advise
I'm also going to buy this again!
but the old one does not think is not broken. we just went at the end
September for mushrooms, mushrooms did not pick up, but we got ourselves, and we
in Chekhov they took him to the police.
so now my ceramic knife cuts products with a simple
Chekhov's cop
Lazy
I also thought about ceramic when I was choosing, but even the sellers warn that they are fragile, a piece may break off from a blow or fall. I want to, I lick my lips ... I'll calm my nerves, meditate, and when I feel that the desire to throw knives has disappeared, I will definitely buy
Alexandra
So I have the long-awaited Japanese YAXELL Damascus steel: for steaks, chef, sandwich and for cleaning. Mastering

Alexandra
kinski,

They gave me the gift of mine after my birthday. I really tried on them, but the gift was different.
And yesterday I crawled from work - mine say to me - you are completely sad, so we decided to pamper you
Indeed, they are beautiful - I cannot take my eyes off, while I cut little with them in a serious way, but I really liked it
kinski
Alexandra, I generally breathe unevenly towards the knives)))
Lazy
AAAA, white envy Handsome men !!! Maybe I need a server too? : :) A thin tramontina is sometimes very helpful ...
galka
Alexandra, and at what price are these knives, otherwise German ones like Lazy for the price they bite very much
foxtrader
Japanese ones usually bite even more than German ones :-( I have Damascus steel myself. Quite expensive.
P.S. I had a ceramic Japanese Kasumi. Once fell into the sink, a piece broke off closer to the handle. The second time I dropped it there - I cocked
I support shade, ceramic knives keep sharpening much longer and better than any metal. They cut with a bang. I realized that it was necessary to finish the ceramic knife in about half a year. And they said to bring it to the sharpener in five years.
If you handle it carefully and do not drop it, it will last a long, happy life. Only this one definitely needs its own branded closer, it is diamond-coated.
I also want to buy some ceramics. This time I won't cock it so quickly
Alexandra

Mine do not recognize where and how much they bought
I saw it on the site, but maybe there is a cheaper one

galka
Alexandra, yes, I have already looked, to be honest, I did not expect such a price for this, I still need to mentally prepare for it because $ 80 is a knife, I can still survive, and 200-400 is still difficult for me, although I agree that a good thing costs money, however, prices are still shocking
Lazy
Take a closer look at Arcos, Spanish. Almost every kitchen utensil store can be viewed and touched. And you will select a series for every taste and the price is reasonable. Victorinox is less common in Kiev, but you can try to find it.

I have solid steel Arctic Vinzer knives.

Very nice design.
maya125
The design is good, I've been looking at these for a long time, but the quality? has anyone tried it? I also want to change because the tramontina requires a weekly sharpening already tired.
I still regret that I threw away the old Soviet knives, so I was happy with them, and so for 10 years I have already changed 5 sets of different ones, and the truth is that the avaricious pays twice, I had to immediately take an expensive set

Knives are not bad, four. But they require careful handling! I just had a precedent. A similar knife slipped out of his hands quite by accident and fell to the floor with its back side. Chipped off a piece of tile. So you need to be careful with these knives. There is certainly a folk omen if the knife fell, then a man will definitely come (who changes the tile).
musyanya
I bought myself a bread knife from Berner today. Before that, there was an old bread knife. New cuts bread like butter !!!!!!! Now I think, what if Berner still has other cool knives, but I don't understand anything about them ... Does anyone have? Knives from other manufacturers, which many praise here, are somehow not very common with us on sale ...
kolynusha
musyanya, I have a Berner set. I'm not very happy with them. They are 3 years old. You often have to sharpen. When I bought them, they had a wooden and plastic handle. With a wooden one is 2 times more expensive. I have a plastic one. So, 2 knives, which I often use after 2 years, broke off pieces of plastic, replaced them with new ones. But for this price category, the knives are good. I will change to Japanese. We also do not have good knives, I will buy them through the online store.
Alexandrahow are your knives? Have you made friends with them?
Alexandra
kolynusha

Knives are wonderful, only until I learned how to use them fearlessly. After each cutting, so that the beauty of Damascus does not deteriorate, I wash it with cold water, wipe it with a towel and put it back in place. Not like the former
While they are standing in an ordinary wooden rack, which is not great - I will not buy a rack with a magnetic bar
