Ingredients

Sauerkraut 2 handfuls
Potatoes 3 pcs.
Carrot 1 PC.
Bulb onions 1 PC.
Pearl barley 2-3 st. l.
Dry porcini mushrooms 2 pcs.
Tomato paste 1 tbsp. l.
Garlic 2-3 teeth
Salt
Bouillon 1.5 liters
For broth:
Pork (I have a shoulder) 300-500 gr.
Bulb onions 1 PC.
Small carrots 1 PC.
Celery 1 petiole
Bay leaf 1 PC.
Black peppercorns 3 pcs.
Unpeeled garlic 1 clove
Salt taste
Vegetable oil and butter (for frying) 1 tbsp. l and 20 gr. respectively
Parsley root 2 cm
For filing:
Sour cream and fresh herbs: dill, parsley

Cooking method

  • We cook broth * (I did this in the evening).
  • Peel and wash vegetables.
  • Also prepare the meat: wash, dry, cut out the veins and excess fat.
  • The meat can be cooked in one piece or cut into 30-40 g portions, which I did.
  • I also had 4 chicken drumsticks, they were also put into broth. But they are not required and they did not go to cabbage soup.
  • Put a piece of butter in the bowl of the pressure cooker and heat it up for a minute using the FRYING mode. Fry the vegetables, cutting the onion and carrot in half, 3-4 minutes.
  • Then add meat (sliced ​​or chopped) and fry for a minute on all sides.
  • Ural cabbage soup (multicooker-pressure cooker Brand 6051)
  • The FRYING mode will turn off and let the bowl cool down a little by removing it from the multicooker body.
  • Add bay leaf, peppercorns, garlic, parsley root to the bowl. Salt to taste. Pour in 2 liters of cold water.
  • Cook the broth on the SOUP mode for 8 minutes. After the signal of readiness, let the broth brew for about 20 minutes (I had the broth overnight in a closed pressure cooker. I turned off the heating in advance.)
  • Remove meat and vegetables from the finished broth with a slotted spoon. You can even strain.
  • Cook cabbage soup.
  • Prepare vegetables: peel, wash and cut: onion - into cubes, carrots grate or shredder Berner (for example, on Roco), potatoes - into large cubes or strips.
  • Pour boiling water over dry mushrooms and let it brew for 30 minutes.
  • Also pour boiling water over the washed pearl barley.
  • Throw the sauerkraut in a colander to drain excess liquid.
  • Pour 1 tbsp into the pressure cooker bowl. l. vegetable oil. Switch on the FRYING mode.
  • Fry onions and carrots until soft. Add tomato paste and simmer for 5 minutes.
  • Turn off the frying.
  • Add potatoes, cabbage, pearl barley, mushrooms to the bowl (drain the water and can be cut if they are large).
  • Pour everything with broth (no meat). Salt.
  • Switch on the SUP mode for 10 minutes.
  • After the signal of readiness, you can manually release the pressure (carefully! Hot steam!), Or you can wait 15 minutes, the pressure will equalize, and the cabbage soup will infuse.
  • As the pressure drops, open the lid and add cooked meat to the cabbage soup (if the meat was cooked in one piece, then it needs to be cut into pieces), chopped garlic and chopped dill. Close the lid for another 5-10 minutes.
  • Pour the cabbage soup into bowls, sprinkle with chopped parsley and serve with sour cream.
