Chicken broth in the English style in a pressure cooker (multicooker-pressure cooker Brand 6051)

Ingredients

Chicken pieces with bones * (I have wings) 300-400 gr (5 pcs.)
Carrot 1 PC.
Onion (leek) 1 PC. (1 stem)
Celery a couple of root slices or petioles
Parsley root 2-3 cm
Garlic (unpeeled) 1-2 teeth
Parsley 2-3 twigs
Bay leaf 1 PC.
Black peppercorns 3-4 pcs.
Butter 20 gr.
The water is cold 1.5-2 liters
Salt to taste

Cooking method

  • A long time ago, my mom used a pressure cooker. Big one, I remember. It was bought back in the 80s somewhere in the vastness of the Crimea. Mom does not remember exactly where. This same pressure cooker was accompanied by instructions - a thin yellowish A4 sheet folded in half. Three pages briefly described the design of the pressure cooker and how to use it. And on the last page there are a couple of recipes. I don't even remember what these recipes were. The pressure cooker itself, and the leaflet instructions are gone for a long time - they got lost when moving. And some time ago, I was watching Jamie Oliver's show, he was making pumpkin soup in a gas pressure cooker. Watching Jamie fry vegetables in a pressure cooker, pour them with broth, prepare the base for the soup 6 minutes from closing the valve and then set it aside for 20 minutes - I understand that I already know something similar. Rather, when I read about it. For several days I went about not understanding what Jamie inspired me. And so I still remember that on that same leaflet there was a recipe for chicken broth with vegetables in the English style. Bingo!
  • Peel the vegetables.
  • Cut the onion or leek (or both) in half (dissolve the leek along the stem).
  • Cut the carrots into thick slices or simply into quarters.
  • Celery, if root - cut into finger-thick slices. Petiolate - cut in half.
  • Prepare chicken parts for cooking - wash and cut into convenient pieces.
  • Switch on the Brand 6051 pressure cooker. Select the FRYING mode.
  • Melt a piece of butter in a bowl.
  • Put in a bowl onions (onions or leeks), carrots and celery root (if used. I didn't have celery at all today).
  • Fry on each side for 3 minutes until golden brown.

  • Add chicken pieces to vegetables and fry for 3-4 minutes.

  • Disable the Frying mode. Let the pressure cooker cool slightly.
  • Add petioled celery, unpeeled chives, parsley root, bay leaf, black peppercorns, parsley to the bowl of the pressure cooker (pre-tie with a thread or just tie the stems in a knot).

  • Fill everything with cold water. Salt to taste.
  • Set the SUP mode for 6 minutes. Then leave on the heat for 20-25 minutes, until the pressure is completely equalized.
  • Open the lid and see

  • There is not even a hint of foam. Clean, "thick" broth is ready. It remains to strain it or just catch the vegetables with a slotted spoon and you can pour it into broths.

  • You can serve broth by sprinkling with herbs or chopped garlic, simply with bread, croutons or croutons with cheese, boiled egg, homemade noodles. Any soup can be prepared on the basis of this broth.

* You can use the bones with some grilled chicken meat.

I used to add raw vegetables too. But with the broth fried even on a chicken skeleton from a grilled chicken, the broth turns out to be very rich, aromatic, tasty! For myself, I decided that I would not cook with raw ones anymore. Frying vegetables takes about 3-5 minutes, and the taste is unmatched in the end!

And when I cooked broths with raw carrots, she ate her favorite soup without desire. And if where a piece of carrot comes across, I put the plate aside altogether. But having tried it on fried vegetables, I ate it with carrots (I cut it randomly with a knife). I was shocked.
