I also have a Steba FG56 grill. At first I could not adapt with meat. And then I reached it empirically, first at maximum mode for 5 minutes, then 10 minutes at 3 mode. It turns out delicious, and I also put baking paper, I have silicone, but I still grease it with oil. I fold it in half, and fold it outward so that the drain for the fat is open, and under the grill itself I put a small wooden block and everything is ok !!! I hope you become friends with this grill. A big plus is that the plates are easy to clean or wipe off. I have for more than a year as new, probably due to the fact that only 230V.
