In the second part of the cooking, of course, it was a bit heavy, I have a large casserole, but the walls and my hands were in the caviar, and this mass was hot.The question is therefore - if you need to cook for 3 hours in total, is it possible, for example, to grind at the end of cooking, or is it fundamentally to boil already chopped caviar for 1 hour.
I had a very "tomato" tomato paste, and I was even slightly upset, I thought it would be sour after adding vinegar, but in the end I poured all the vinegar according to the recipe and lo and behold, the taste turned out so balanced, in general, everything was done strictly according to recipe and very tasty, I wrote down the recipe in a notebook of my constant and tested ones.
I plan to make more caviar, the next batch of zucchini is growing, hurray!

The salt is now really different, both in salinity and in composition. I take Belarusian or Kyrgyz (I don’t seem to remember exactly). No anti-trace additive. I cooked the last batch, so it was burnt for the first time. The zucchini were overgrown, dryish, the mass turned out to be very thick, so it immediately grabbed. I don't know why it explodes. We must look for the reason in ourselves, maybe salt and vinegar. I repeat that I keep caviar at home, without a refrigerator.
