Courgette caviar uDachnaya

Ingredients

Zucchini (net weight) 3 Kg
Onions (net weight) 750 g
Carrots (net weight) 750 g
Salt 30 g
Sugar 50 g
Vegetable oil 115 g
Tomato paste 300 g
Vinegar 9% 3st. l.

Cooking method

  • Peel the onion, cut into cubes, pour boiling water over, leave for 10 minutes. Drain the water.
  • Peel the squash, remove the seeds, cut into cubes.
  • Peel the carrots, cut into cubes.
  • I cut everything with Berner.
  • Combine all ingredients except vinegar. Cook under the lid after boiling for 2 hours, stirring occasionally.
  • Grind with a blender. return to the pan and cook for another 1 hour.
  • Add vinegar, adjust salt, sugar if necessary (depending on tomato paste), mix, pour into sterilized jars, roll up, turn over, wrap, leave to cool.

I saw the recipe on the internet. It was originally oven-baked with different proportions of onions and carrots. The vegetables were rolled through a meat grinder, they were not chopped with a blender. I did it three times, adjusting it to my taste. I scrolled it in a meat grinder, immediately chopped it with a blender, changed the onion / carrot ratio. As a result, we got such an option, which satisfied 100%.
