The knives are chopping the protein threads
in 5 minutes, nothing irreversible will happen, while the minced meat is cooking, the dough is still a little resting - on the cut, according to my mother's definition, like silk the dough is perfectly beaten off, the dough soon rolls into a pear sausage and beats against the walls of the bowl, the knives chop it a little

it's good when everyone has different experiences - food processors are different, the shapes of bowls and knives are also different

tried the dough with the same proportions in the dough mixer.
yes, so I missed this phrase = in a dough mixer, knead the dough that Vera gave = it's very cool for him

Vera has the proportions just for the crumb - then the maturation of the dough - the formation of gluten - mixing by hand

and for me this proportion is a very tight dough, I make it softer, and it is much easier to roll it out with a rolling pin and a dough roller

but everyone has their own tastes

Well, it's good that you're good at it. I didn't succeed - if there is less flour, then the dough is soft and too flabby for dumplings, it is boiled. If there is more flour, then there is no question of any dough in the bowl - there is only a crumb.

But even very tough dough prepared in this way crumples on the rolling machine and sticks to itself.
Whereas I have never folded the kneaded with a Kenwood hook when rolling, and the dough that has formed like an accordion does not stick to itself even after a few minutes. By the way, at first I was very worried about such steps-stripes on the layer during the first pass, when we roll a thick piece. I didn't understand where they come from and how to avoid them. But it turns out that this is just a consequence of poorly kneaded dough with undeveloped gluten. He lacks elasticity.

Kara,
Ludmila (Luda)
Irsha, Bijou, Rituslya, Kara, $ vetLana, Thank you very much! That they shared their personal experience and their opinions in such detail on the issue of making dumplings.

Kara
I did so, did not knead the full amount of flour, so that there was already dough, but not yet dumplings and kneaded with hooks. Then she took out the mixing with her hands, adding the required amount of flour.
Irsha
especially, if such a non-pelmeni dough is allowed to lie down for a while, then it is stirred quickly and almost does not stick to your hands, the gluten will develop

I will try this way, it looks like this is the most accessible method for me so far.
Thanks to everyone who took part in the discussion. Took a note:
With a hand mixer - partially, then manually
Harvester - you can, but there are nuances
Kneading machines - quality machines do this job well
A bread maker is a good solution for kneading dough

I don't have a harvester, there is no place to put it, and there is no need, therefore, I will definitely not buy it just for kneading dough. Perhaps I'll try to knead the dough from someone I know. If you like it then I will think.
A bread maker is a good thing, but I don't bake bread. Places to put nowhere, therefore, too, with the purchase on time. For now, I plan to try baking bread in a slow cooker. If I get a taste, then a bread maker is a good option.
If baking bread does not work out, then the Kneading machine is the best option. BUT the question is in price and place.
Once again, thank you very much for helping to figure out the dumplings dough. Now I understand the nuances.
Bijou
Ludmila, but not at all.) That's how it always happens - while two are arguing, the third, the smartest, shakes his conclusions. You, most importantly, try new things more often in order to have your own opinion.)) Well, we almost all have dough rolling machines here, some of them are manual, some are electric. And this allows you to roll out a very tough dough, I definitely cannot do this with my hands.

With the filing of one forum woman with a dumpling dough, I recently attended to, starting to make inquiries "why the dough bursts during cooking". To begin with, for the first time, I kneaded a portion of noodles (for one egg and a spoonful of water), not as usual, kneaded for about five minutes - let it lie down - rolled it - cut it, namely what I kneaded - for a long, long time, until a dry silky structure appeared under my fingers and stretching a piece into a rather thin window. So the noodles from it turned out to be of a completely different taste.

So try it, and good dumplings!

By the way, when I was discussing this method, I was given a wonderful argument - a similar technology of chopping dough into crumbs is practiced with might and main in pastry dough. With a directly opposite purpose - loosen gluten.

Well, it more or less successfully "self-develops" for a very long time, and in a rather liquid dough. (

good bread in a multicooker, turn the bread over and bake the top = no work

I have no HP for 7 months already, and I do not suffer at all
I bought my 2 hp only because they were not expensive and for the sake of interest, and now the xps are expensive

I knead bread with mixing spirals in a 5-liter bowl, on 1 liter of liquid (completely different liquid: water, milk and lactic acid, broths, brines, meat pickles, in general, almost any liquid is suitable for bread dough - and every time not a big surprise for smack), and long the dough will never let you down - even though a working woman is comfortable, even though she is at home more often

It doesn't work out more often, but I will try as much as I can.
Thanks again for the nuances, they are very important.
Irsha, thanks for the valuable information. I wrote it down.

By the way .. To complete the offtopic.
Do you know what moisture dough is made for dumplings in factories ?? Starting from almost 36% !! Well, 38-42 is generally the norm. Whereas even the local 50-48% my harvester barely mixes. But there are also machines of a completely different kneading principle, so we can't keep up with ordinary machines ... ((

Bijou, as well as with sausage emulsion - do not keep up

Sveta, I have 62. What exactly are you interested in?

What exactly are you interested in?
Light, I didn't have any harvesters, so I don't know what to look for,
generally interested in quality, reliability, ease of use

$ vetLana
Sveta, I chose Philips, because I have an old one too, Phillips, he is already 25 years old. He works, I took him to the dacha.
The new one has more features. I make salads (he has 2 graters and shredders). I make dough with a knife (not very dense). Blender - puree soup. With a potato cutter - vegetables (eggplants, etc.) - rather large pieces are obtained - for stewing, freezing. With a small mill (cat. Like a glass) - I grind spices.
Of the minuses - a short cord and (for me) a small volume.
Pros - compact.
If you still have questions - write
sveta-Lana
Light, another such question, 61 and 62 differ in nozzles, 62 have completely metal, and 61 have a plastic base into which a metal part is inserted and therefore 61 is apparently cheaper
I’m wondering whether it’s worth overpaying or is it still not shy and take 62
$ vetLana
sveta-Lana, Light, I don’t squeeze, so I bought all-metal ones, somehow I don’t believe in plastic. Yes, and in the old combine only metal. Is there a big difference in price?
sveta-Lana
where I saw a difference of a thousand

Big
sveta-Lana
Yes it's big
Sveta thanks for the tip, I will think

I didn't find anything here and decided to ask a question, thank you, you responded

sveta-Lana,
Rituslya
I have one of them (I followed the link), but I don't remember which one. I sell it because I don't use it at all.
I bought it, was glad and removed it.
$ vetLana
sveta-Lana, Light, looked at the attachments. I will also add: what I don’t use: a plastic dough knife (I only use a metal one), a cheese-chocolate grater, a mousse disc.
The nozzles are in a plastic tray, cat. convenient to store in a drawer.
sveta-Lana
$ vetLana, I'm wondering, some in the reviews write that I'm beating eggs, cream ...
I can't imagine how you can beat with such a disc
for me the only tool for whipping is a whisk
$ vetLana
sveta-Lana, Sveta. I do not know. The old harvester has a vechik and a dough hook. But, I just beat it with a knife. In an old harvester I like the stepless speed control. In this: two speeds and a pulse mode.
Maybe you can whip in a blender? I did not try.

Somehow they tried to make the dough with a plastic knife - it floated up.

Maikla, Good afternoon, tell me please from the Energia combine what is the size of the loading hole. And where it can still be bought, I wrote to the plant - they did not answer, it is not available in stores. Thank you.

Please tell me from personal experience: is it worth buying a combine Рrofi cook pc-km 1004?
Or maybe an alternative option, mainly for dumplings and yeast dough to cream.
Thank you in advance!

required !!! otherwise, how do you know - the working unit or not? they themselves are sold in stores, they check everything, this is the norm, and if at points of issue, then such inclusions are also required
happy shopping

Irina, Thank you! I took it, the consultant turned it on, checked it, without my request, everything is fine
however, as always, Phillips has a bulky box, did not dare to take a minibus, I had to wait for a bus
I went home and said to myself: "Well, Svetik, take a gift!"
now I would rather warm up and I will experience

Good day! Please help me with the choice of a heated combine. On German sites I found - Kenwood 094/096 and a kitschen thicket with heating at a cosmic price. And there is a boman, a clathronic, a klarstein from well-known in narrow circles, and a completely unknown to me Peter electrician. The last four are more affordable, of course. Are there any budget owners with heating on the forum? What are your impressions of using? Or is it better not to tempt fate and save up for Kenwood? Thanks in advance for your help)

Thank you!

Good day!
My wife and I saw enough video from Tatyana Makarenko, we decided to try the recipe - Indian paratha cakes.
But instead of potatoes cheese, we found out that Adyghe cheese plus cilantro is better.
Whole grain flour with regular 345 gr. ghee 2-3 tbsp spoons, water 150, salt.
Filling - Adyghe cheese 320 gr., 3 heads of garlic, cilantro tray. Spices, my wife added.
Frying without oil.
Liked. Thank you to Tatyana!
Branch about processor / harvester.
On March 8, we purchased ROBOT COUPE R2. bowl 2.9 l.
The dough kneads perfectly, and makes the filling no worse.
Dough kneading 35-37 sec.
I choose a harvester, blender, processor
Filling, cheese + cilantro + 3 heads of garlic - pulse mode 5 sec + 2 sec.
I choose a harvester, blender, processor
Miranda
Michael, oh well, a harvester for that kind of money?
And he has some kind of production design, chopped.
Alena Besha
eye, Tatiana, do you mean the Sanyo food processor ("Energy"), or the Sanyo kitchen machine? I bought myself a harvester, which was manufactured under license from Sanyo in Korolev. According to the reviews, I looked, read, and bought a new one at a ridiculous price, 1.5 years ago. His design, as for me, is rough, chopped, but I bought it taking into account the fact that this animal could be transported to a private house, where it will work in summer. Therefore, I chose reliability, and closed my eyes to appearance. Who is very confused - they used it - and put it in the closet if that. VERY powerful motor, super! I have been using it for 1.5 years, so far without any complaints, according to reviews, people have served for more than 10 years - everything is reliable. The set includes a motor base, a bowl, a lid with a loading hole, a lid without a hole, an S-shaped knife with a serrated edge, a plastic cover is put on it - a plastic dough knife is obtained (the proteins are whipped to peaks), a nozzle for a bowl with a citrus press (juicer). Metal nozzle inserts are stored in the case - 2 graters (large and small), a shredder, a fries attachment.
In general - Sanyo in the form of a kitchen machine can only be bought from hands, they are Japanese. She herself looked at this, again - to transport it to the house like a hamster. Because it's a pity to kill an excellent Zelmer meat grinder with shredders with large volumes of products for preparations. One drawback - I think that such a kitchen machine definitely does not have a planetary kneading mode, it appeared not so long ago.
