I use flexi for creams and for everything with cottage cheese. I don't eat cottage cheese, I don't like it, and in general IMHO it's disgusting. The only option is to grind it into a mass with sour cream. This is still normal.
I mix minced meat for sausages and wieners in my own steel bowl with a hook and everything suits me. For sausages I use a multi-mixer attachment.

Yesterday I was kneading meat for ham in Bosch MUM 4855. I took 750 g of meat (turkey and pork) cut into 2x2 pieces. I was afraid to take a kilogram. Not "blender" - straight into the combine. Added 100 g of water (prescription). Boshik mixed everything easily.I think it's easier for him to knead meat on ham than dough, because the meat is cut into pieces and they break up when kneading with a hook. Next time I'll put a kilogram of meat. Kneading for 15 minutes, first at 1 speed, but very weakly, switched to the second and kneaded on it to the end. After the blender, of course, there are more white fibers, but even here they appeared by the end. I mixed all the water into the meat. The ham turned out to be good, did not disintegrate when sliced, although the recipe was without gelatin. I am happy, now I will knead meat in Boshik.




Maybe kneading depends on the speed? Kneading the dough at speed 1? Sooooooo slow, maybe because of this everything was smeared with a hook and was not going to the kolobok? And 2 speed will quickly knock out the gluten and the food will not smear on the walls. IMHO my guess
