Quail in wine with raisins and nuts

Ingredients

Quail 4 things.
Sweet wine (I have apple grog) 150ml
Balsamic vinegar 1 st. l.
Celery stalk 1 PC.
Bulb onions 1 PC.
Raisins 2 handfuls
Pine nuts 1 handful
Fresh thyme 6 twigs
Olive oil
Salt pepper taste

Cooking method

  • Spread the quail. Rub with salt and pepper.
  • Mix wine, vinegar, herbs with 3 sprigs of thyme, pour over the quail. Cover and leave to marinate for 12-24 hours, turn once.
  • Finely chop the onion and celery, fry in olive oil until golden brown. Add washed raisins, nuts, remaining thyme sprigs. Stir and simmer for 1-2 minutes.
  • Place vegetables in a baking dish in a thin layer. Put the quail on top, pour the marinade.
  • Bake in an oven preheated to 180-200C for 50-60 minutes.
