Quail in a mushroom nest

Ingredients

Quail 4 things
Champignons large and open 4 things
Olive oil 2 tbsp. l.
Butter 30 gr.
Fresh thyme 8 twigs
Bay leaf 4 things
Salt, black pepper
For gramolata (seasoning)
Parsley 1 bundle
Lemon 1 PC
Garlic 3 cloves

Cooking method

  • Preheat the oven to 200C. Heat the butter and olive oil in a baking tray at the top of the oven. Wash the quail, put 2 sprigs of thyme and a bay leaf inside each. Peel the mushrooms, leave only the caps. Place the mushrooms on a preheated baking sheet with the cap facing down and place a quail in the center of each mushroom. Drink the melted butter on the poultry and mushroom edges, season with salt and pepper. Roast in the oven for 15-20 minutes. In the process, they must be watered with fat.
  • While the quails are fried, cook: wash, dry and chop the parsley to make 2 tbsp. l. Rinse off the wax from the lemon and grate half the zest. Peel and crush the garlic in a press. Mix everything in a small cup. Shortly before the end of frying, brush each bird with gramolate and put it back in the oven.
  • Delicious ... very! Only quails have very thin and sharp bones, so be careful! (it was in me that the doctor spoke: girl_haha :)
