The timer displays 06 - right! This is the default time, the most common for yoghurt sourdough, and can be changed. At the end of the timer, heating is switched off.

After reading that it is still better to make a sourdough out of it, since for many, if you immediately add it to milk without sourdough, it does not thicken - I brought homemade milk to a boil - I cooled it down and fermented 1 ampoule of narine in one jar from the yogurt maker.In the rest, since I really wanted to try the yogurt maker, I went and bought it and added natural activity (850 g which is a bottle) - I spread 170 g for all the other jars, that is, for 1,200 liters of milk:

I set the time to 8 hours (for the experiment - then I decided to correct it depending on the taste, yes, and I would not have woken up to clean it before) In the morning I took it out (the rest are already in the refrigerator):

The thermometer is lying by 0.5 degrees - checked by numerous comparisons with 3 mercury ones - it turns out at the exit after 8 hours - the temperature is 42.5 degrees. It turns out overheating ??? And will all the beneficial bacteria I plan to do later be killed?
The product itself: What was from Narine's sourdough - as soon as it was taken out of the yogurt maker - did not differ much in consistency from milk. I put it in the refrigerator - now it's been 4 hours - the leaven has remained like milk.
The yogurt itself (on Activia) is homogeneous in consistency - the photo shows that it is thick - the thermometer is even when it has not been put into the fridge - now I tried it - it tastes excellent, delicate and thick. Tastes like natural French or Dutch natural yogurt :-) Made on the advice of Mona1 Tanyusha with blueberry jam and frozen strawberries - just aoooooooooooo delicious.
The only thing now I'm worried is that the temperature after 8 hours is 42.5 ...
