Bread "red curl" with hop sourdough

Red curl bread on hop sourdough

Ingredients

Flour 3 tbsp.
Sugar 2.5 tbsp. l.
Salt 1.5 tsp.
Olive oil 50g
Powdered milk 2 tbsp. l.
Milk 130g
Hop sourdough 200g
= tomato = 2 tbsp. l.

Cooking method

  • Knead the dough (do not add the tomato!) In the "pizza" mode.
  • Leave the dough to proof. This process can take a long time. Then knead the dough and leave for proofing again.
  • As the dough fits a little, divide in two.
  • Add tomato to one of them.
  • Roll out two layers and roll up a roll.
  • Let rise well and bake for 1 hour.

Note

Hop starter culture No. 1

- dry hops 1 cup
- water 2 glasses
- 1 tbsp sugar
- 1/2 cup wheat flour

Boil the hops in 2 cups of water until the water is halved. Then let the broth stand for 8 hours. Strain and squeeze. Then pour 1 glass of broth into a half-liter jar, dissolve 1 tbsp in it. l. sugar + half a glass of wheat flour. Stir well and cover with gauze.
Put this solution in a warm place for two days.
The leaven should be doubled.
After using the sourdough, leave a little for a new one, but we do it like this: (called feeding the sourdough)
Brew rye flour (2 parts) with boiling water (3 parts), mix well, add the rest of the leaven and mix well again. Leave. After a while, the leaven is ready for use again.
