Wheat bread 7 cereals

Ingredients

Wheat sourdough 100% 400 BC
Wheat flour, premium 300 BC
Wheat flour c / z 150 g
Flakes 80 g
Water 300 ml. + 50 ml.
Salt 14 g
Sugar 20 g
Lard (or ghee) 20 g

Cooking method

  • Pour the flakes with 300 g of boiling water and leave for 20-30 minutes. Knead the dough from flour, lobes of flakes, sugar, sourdough (if necessary, add the remaining (50 g) water to the bun. Add salt and lard (butter) at the end of kneading. The dough is soft and elastic.
  • Place the dough in a warm place to rise (until doubled).
  • Divide the risen dough into 2 parts. Form loaves.
  • Wheat bread 7 cereals
  • Proof for about 1 hour 30 minutes.
  • Bake in the oven with steam for the first 15 minutes at T = 240 * C.
  • then T = 180 * C - 25-30 minutes (remove the steam generator)

Note

For proofing, I put the forms in a large bag. And they do not dry out, and heat and moisture are created from themselves.

Ira, I make a tourniquet from dough, which is 2.5-3 times longer than the shape (depending on how frequent you want the lash)
I bend it in half and twist these ends together to the length of the shape. I select the cut edges of the bundle under the workpiece and put it in the mold. That's all the wisdom.
