I don't have Polaris, but let me share my opinion. I don't think you should use any kind of heating at all for proving the dough. The saucepan is already warm, and the dough rises perfectly. The "Warm up" button is absolutely not suitable for these purposes - there the temperature is brought to the boiling point.And the "Heating" button (the one that maintains heat) is softer, but even there the temperature is raised significantly higher than 35-40 * required for the test. At a higher temperature, the yeast will die, and accordingly the dough will die. You can, of course, turn on "Heating" for just a few minutes, but the temperature is still impossible to track, then is it worth the risk? Instead of a wonderful bread, you can get an unviable dough.
I myself bake bread in a slow cooker. After kneading, I give him the first proofing in HP, and after that I transfer it to a multi saucepan. I close the lid, and it rises perfectly there in 30-35 minutes.
