Sponge roll with lemon curd

Ingredients
Biscuit:
Wheat flour 3/4 tbsp.
1/4 cup milk
Salt 1/4 tsp
Sugar 2/3 tbsp.
Butter 2 tbsp l.
Egg 3 pcs.
Yolks 3 pcs.
Baking powder 1 tsp.
Filling:
Lemon juice
(1 large lemon) 1/2 tbsp.
Lemon zest 1 tbsp l.
Sugar 2/3 tbsp.
Butter 50 g
Egg 3 pcs.
Cooking method

Biscuit.
Preheat the oven to 190C.
Line a 40x30 cm baking sheet with parchment.
In a saucepan, heat the milk and butter until almost boiling.
Beat eggs, yolks and sugar with a mixer until the mass is threefold (it should have the consistency of a thick cream). This will take about 10 minutes.
Sift flour with baking powder and salt.
Pour flour into beaten eggs, stirring gently from bottom to top with a spatula.
Put a few spoons of dough in warm milk and stir. Pour the mass into the main dough, mix.
Place the dough on a baking sheet, flatten and bake for about 10-15 minutes. The finished biscuit will have a golden surface. It can be rolled up immediately or after cooling.
Filling.
Bring lemon juice, zest and sugar and butter to a boil. Beat the eggs lightly and, with constant stirring, pour in hot lemon juice in a thin stream. We return all this to a small fire and, stirring, bring to a boil. Cook for another 5 minutes (stirring constantly) until thickened. We filter through a sieve (you can sit without it, only then the zest will be felt in the filling), and then pour into a clean dish. Cover with foil (the foil should touch the surface of the cream and cool.
Assembly.
Apply the filling to the surface of the biscuit, roll up and leave to set in the refrigerator for at least 1 hour.
Sprinkle with powdered sugar before serving.

And the roll turned easily - there are a lot of yolks in the dough, they give it softness. Wrapped, 3 hours after baked. The main thing is not to overexpose the dough in the oven - if it is very browned, then it will be tough and crack. That's how much time is indicated in the recipe - I baked so much, then turned it off, and left it in the oven for another 5 minutes.
