Ingredients

flour 240 g
eggs 3 pcs.
milk 0.5 liter
butter 100 g
sugar 1-3 st. l.
salt 1/4 tsp
dry yeast Saf-Moment 11 gr.

Cooking method

  • Today is Shrove Tuesday, which means what? Right! Mother-in-law should please sons-in-law with pancakes. Well I also please !!!
  • I have been making pancakes with this recipe for many years. Pancakes are fabulous both in appearance and taste !!! No son-in-law can resist !!!
  • The mixer must not be used! Only a whisk! Otherwise, you will get a completely different dough.
  • 1. Grind eggs with sugar and salt until the sugar dissolves in a large bowl (the volume of the bowl must be large, otherwise the dough will run away). Do not forget that one Art. l. sugar will go for yeast, keep this in mind.
  • 2. Heat milk to steaming temperature.
  • 3. Take a cup (mug) and pour half a glass of warm milk or cream into it. Add 1 tbsp to milk (cream). spoon of sugar and mix. Add yeast and place in a warm place. As soon as the yeast has given a small cap, immediately pour it into the dough.
  • 4. While the yeast is growing, we add butter to the eggs. The butter should be at room temperature (soft, but not melted !!!!!). Whisk the eggs and butter. It turns out that small pieces of butter float on the surface of the eggs (everything will mix in the mixer and there will be no such effect, and this very effect keeps this recipe, this is its trick).

  • 4. Take the remaining amount of milk (cream) and add it to the mixture (the butter is still floating).
  • 5. Take flour and sift flour into the mixture in small portions. It took me 240 grams. We pour flour, as you are used to on pancakes, only a little thicker, because we also have milk (cream) with yeast. With a broom, carefully mix the flour into the liquid.
  • 6. The final touch - add the yeast, which we have already given the cap. Mix gently.
  • The dough is ready.
  • 7. Then put the dough in a warm place to rise. The dough rises for 45 minutes - 1 hour.
  • We bake as usual. The only unusual thing is that our oil will remain in lumps to the end. It will melt in a frying pan, the pancake will be with nice-looking splashes of oil, but then they will disappear during the frying process. You need to collect the dough with a ladle (it takes me a little more than half a ladle for a frying pan of standard sizes). Each time, you need to stir the dough a little with a ladle, so that the butter is shaken up and not hook everything at once, without leaving it on other pancakes. The dough is immediately covered with holes. The dough bubbles in a bowl until the end of baking.

  • Yes, you can still play naughty and bake the last portion with something, for example, with tangerines. Simply put the fruit pieces into the dough and pour into the skillet. Vkuuuuusno!

  • Py. Sy. There is no need to add sunflower oil to the dough. We already have butter in the dough. Just grease the frying pan for the first time when we heat it.
  • Those who are on a diet and are afraid of calories. It looks very greasy, in fact, it turns out that the pancakes are not greasy. And if you put them with filling and forget to cover with a lid (which you haven't finished eating), then the pancakes become crispy and dry.

Maybe our butter is such that it’s not good for anything.If it was necessary to build a cream, it would certainly come in lumps, and I wouldn’t beat it for anything, but here, only a couple of times I ran it with a whisk - it was evenly mixed with the eggs , only a little on top of the type, a small layer of oil remained. Despite this, the pancakes turned out to be what you need: both tasty and with holes.
