Cucumbers, tomatoes, assorted vegetables.

Ingredients

Herbs for the marinade:
Dill with umbrellas, horseradish leaves, currants, cherries
Garlic cloves
Bitter paprika (thin rings)
Allspice peas
Mustard, coriander, dill, fennel seeds 1 \ 2 boxes l.
Each
For the marinade:
Water 1 l
Sugar 50 g
Salt 50 g
Apple cider vinegar 75-100 ml

Cooking method

  • My greens and coarsely cut with scissors.
  • Cucumbers must be soaked for 4 hours, I cut off the "butts"
  • Garlic with whole cloves. The crushed cloves subsequently give a cloudy marinade.
  • Assorted onions take some of the vinegar from the marinade.

  • I do ...
  • At the bottom of the jar I put pickled herbs, garlic, hot pepper. I put vegetables, interspersing the voids with bell peppers, onions, and even put cabbage slices in several cans.
  • The top of the bookmark is also garlic, hot pepper, peppercorns, spicy seeds, a little greenery.

  • Pour the jars with hot marinade and leave for about 1 hour so that the marinade is absorbed into the vegetables. I add the rest of the marinade to the edge of the jar, cover it with lids and set it to steam sterilize. Liter cans 12 minutes is enough.
  • I take out, tighten the lids and put on the lid until it cools completely.

  • Bon Appetit!

Note

Once again I draw your attention to the fact that canning is a matter of individual taste.
Since I have problems with salt, I adjust the constituent salt, sugar, vinegar to suit myself. If you are satisfied with the very principle of harvesting vegetables in this way, then adjusting salt, sugar, vinegar is a matter of technology.
In my version, the vegetables are crispy, good (not strong) salt, and the vinegar is not pronounced.
Apple cider vinegar is natural, not chemistry.

Admin, can you store it at room temperature?

It will stand very well if done correctly and closed.
My several cans of last year's heat on the balcony in the closet withstood
Solo_A
Thank you for quick answer. And more questions: can grape vinegar be used? I always use essence (70%), but I would like to give up chemistry.
You didn't make an assortment according to this recipe, but did you make cucumbers alone? How are they stored? Does the brine become cloudy?
Admin
You can use both grape and apple cider vinegar.

I made different versions of vegetables, it costs well, you just need to select the concentration of the components of the marinade to your taste

With this combination of marinade on the forum there are my different recipes for vegetables.

Thanks, I will try

I also like not too salty preservation; rolled up 7 jars of 0.72 liters of cucumbers and tomatoes together. Thank you, Admin, per recipe!

Tanyusha, to your health! I hope that in winter it will be time with boiled potatoes
TATbRHA
Admin, what potatoes ... I SO love pickled, pickled, canned cucumbers that I am ready to eat them instead of sweets. A three-liter jar for me is for one day, and then if you give yourself a hand ... I closed the small jars in your way - on purpose so as not to squeeze ... (sorry). The cucumbers are so small, semantic, after sterilization are so beautiful, I just want to start the winter right on September 1 ... The only thing that stops me is the thought that they have not yet ripened in the jar, in a few hours !!
Admin

Tan, as I understand you But, I still learned to control myself, I open a liter can twice a month - and wake me up! otherwise you won't have problems
Today the vegetable salad was closed, it is also ripening
TATbRHA
Well, I tried it.Delicious! Delicate sweet and sour taste, crunch, beauty! Today I covered the leaves and stems of white chard in your marinade with the addition of Korean seasoning. Thanks again!

Tanya, what does it mean to steam sterilize? I know in the water, but there is a gap in education.
Admin
Tanyusha, to your health! Nice to hear that the taste has pleased!
But, it's very cool, canning different leaves. I really like fermented leaves more. Today I fermented beets with grapes, I will see the result only in 2 weeks
Natasha, we are going to eliminate the knowledge gap, it is done like this 🔗

On HP again, pictures from the radical flew, so I give a link to my blog, see there

TATbRHA
Admin, my cucumbers are over ...
I rolled it up according to ten to twelve different recipes for 2-3-4 jars. Well ...
Yours turned out to be the most worthy, the crispest, the most delicious, the brightest, the best - we decided in the family unanimously.
Now I don't bother with recipes anymore: yours are my most relish.
Thank you very much for such a gift.

Tanyusha, an unexpected twist, tastes converged in one jar. Nice to hear that!
Cook for health, in winter and throughout the season you will be with vegetables
CurlySue
Tanya, thanks for the recipe!
Today I went to look for an assorted recipe - and found yours,
and even practical advice on non-contact steam sterilization.
I did just that in liter jars
3-liter ones do not fit under the container, they had to be sterilized in water.

Today I also wanted to make sun-dried tomatoes with balsamic vinegar according to your own recipe, but my hands did not reach ... I also rolled zucchini caviar.
Tomorrow we will dry tomatoes!

Lena, to your health! What a fine fellow you are, you twisted so many things you will be full all winter

Lena, then there is only one way out - to buy a large and high saucepan for large jars, for a growing organism
But, these costs will fully pay off in winter if large cans are used for spinning
Byaka zakalyaka
Tanya, I really want to try your assortment, but at home there is only ordinary vinegar 9% and vinegar 6% with herbs. Which one is better to use? Thank you
Admin

Marina, it's a matter of taste, what kind of vinegar

If there are already a lot of spices in the jar, maybe you shouldn't go too far with them, and take a simple vinegar
Byaka zakalyaka
And reduce the amount of vinegar? Apple is probably closer to 6%
Admin

I have a run of 75-100 ml according to the recipe, that's where we come from, I just don't know your taste, is it sharper or what? Try to do it in two versions, then you will make a choice
