By the way, I always set the temperature adjusted for my oven. For example, when baking a biscuit, I set 150 degrees. Although the recipes contain 180 degrees. i.e. my oven at 150-160 deg. Probably gives out 180 degrees. I didn't measure it with a separate thermometer (nothing). Everything is baked and does not burn from the top or bottom. This will come with practice as you get to know your oven better.

I do everything by typing, since the instructions are in German.

And in general, I turn on the blower very rarely (in 10-20% of cases) and only for about 15 minutes (that is, for a short time) and as a rule at the end of baking if you need to even out the blush. Another possible cause of dry roasts is high temperatures. The temperature in my stove is over 180 degrees. never installed (not required), although I use it for about a year. If you had the opportunity to reread this topic, you probably noticed that many people additionally purchase a thermometer, put it in the oven and turn it on to check the temperature. I cook any baked goods at a lower temperature than indicated in the recipe and I conclude from this (even without an additional thermometer) that when set, for example, to 160 degrees. the oven produces approximately 180 degrees. So it is not always necessary to believe that the set temperature will be during cooking.

The temperature from the upper shade warms up the food surface most of all and the blush turns out quickly (you just need to look out, otherwise the top will quickly burn out), and if you turn on the airflow here, then the temperature will accelerate throughout the chamber and the blush will appear much later. Therefore, if you want the finished food to brown, leave only the upper ten.
