Rhubarb Ice Cream

Ingredients

Rhubarb (I have ice cream) 200-250 gr.
Butter 30 gr.
Vanilla sugar 1 tsp
Sugar 0.5 tbsp.
Salt pinch
Heavy cream 1 tbsp.
Milk 1 tbsp.
Cherry jam syrup (optional) 1-2 tbsp. l
Glass 250 ml

Cooking method

  • Cut the rhubarb into pieces (I have ice cream, I did not defrost it). In a small saucepan, combine rhubarb, sugar, vanilla sugar, salt and butter

But the recipe itself requires improvement, in my opinion.

I would stew rhubarb with sugar without adding oil, it is superfluous here. Then I would definitely process it with a blender and strain it through a coarse sieve. Rhubarb fiber is not the nicest ingredient in soft ice cream.
Next time I will.

Instead of oil, I used 1 tsp as an emulsifier. a spoonful of cornstarch, thickened the milk and cream with it.

If you take 20% cream, then the butter will definitely not be superfluous. But this is just my opinion (there is no dispute about tastes!).
Rhubarb is ripe! There are already several bags in the freezer. Today I will try to cook with heavy cream without adding butter.
