Ingredients

DOUGH:
Flour 2 tbsp.
Butter 100 g
Sour cream 150 g
Sugar 0.5 tbsp.
Egg 1 PC
Soda 0.5 tsp
FILLING:
Lemons 2-3 pcs.
Starch 2 tsp
Sugar 4 tsp

Cooking method

  • Boil lemons in plenty of water for 15 minutes. Cover with cold water and chill.
  • (Digestion of lemons is necessary to get rid of specific bitterness. If the lemons are not too bitter or if you like this bitterness, then you can not digest them.)
  • Cut, select bones and either grind in a blender or mince.
  • Mix the lemon mass with sugar and starch.

  • Rub flour with butter with your hands.
  • Add yolk (set aside protein), sour cream, sugar and baking soda.
  • Knead the dough. Divide it into 2 unequal parts. Roll out most of it and put it in a shape (rectangular 16x25 cm or round d = 22-24 cm), forming sides.
  • Put the lemon filling on the dough and cover with the second rolled part of the dough. With this very part, we do this: a rectangle is rolled out, whose length = the length of the cake, and the width is 1/4 less than the width of the cake.
  • Then several lines of incisions are made, like a dotted line.

  • The cuts in each line are made with an offset:
  • 1st line: cut - pass - cut -...
  • 2nd line: pass-cut-pass -...
  • 3rd line = 1st line
  • 4th line = 2nd line
  • Then the dough is slightly stretched in width and the cuts are opened.
  • Brush with protein.

  • Put in an oven preheated to t = 200 ° C for 15-20 minutes - until browning (I have baked for 30 minutes).
  • Cool the finished cake slightly, remove from the mold and cut into pieces.

Today I disposed of the accumulated lemons. Good Cook recipe. It turned out delicious. Only lemons I have from Italy, remained bitter even after cooking. Perhaps ours, the store ones, will not be so brutal. Everything else turned out to be very tasty.

The pie is already baked. But for some reason he did not rise as well as it seems to be. By advice Stеrn I mixed flour with baking powder. Can a cake rise badly due to the fact that there was a lot of filling in it? Everything else I did according to the recipe. Baking powder put two teaspoons.

In short, I cooked lemons, everything with the pulp without any problems. I cut the skin and decided to walk with a blender. I don't really have a blender, but a leg to a mixer with a nozzle. The skin has not undergone any changes, and that "blendar" is no longer there. But I bought a new Phillips. But this is not about that.
Since the "insides" of the lemons were not enough for the filling, I put cherries on the pie, added sugar, but this seemed to me too little, I also threw a handful of almonds. It turned out very tasty
The next day I made the dough again, but baked it just with a cake, then spread jam on the cake, well, and on top of the butter-protein cream (I wanted to try a new blender, but out of habit, I beat everything in 3 minutes with the old oneLemon pie)
And then I realized what kind of deliciousness it is !!!! It tasted like jam and butter custard baskets. I loved this cake
