Meat in milk

Ingredients

Pork 700-800 g
Salt, ground black pepper
Ground coriander 1 tsp
Butter 2 tbsp. l.
Olive oil 2 tbsp. l.
Finely chopped garlic 3 cloves
Milk about 0.5 l
1/2 lemon zest

Cooking method

  • Cut the pork into rather large portions (3-4 large "cubes" of meat are obtained). Mix salt, ground black pepper and ground coriander, roll the meat in this mixture. In a deep frying pan with a tight-fitting lid, heat the butter and olive oil and fry the garlic until golden brown. Put the meat there and immediately pour milk about 2/3 of the height of the meat (but depends on the diameter of the pan), add the zest of half a lemon. Cover tightly and simmer for at least 2 hours. I flip the meat occasionally. The milk should boil down and "curl up", as it were, to get this 2 sauce.
  • This time I did it in the cartoon - it turned out very well too. (First "Baking" 40 minutes, then Stewing for 1 hour)

Natay, you know, it seems to me that milk gives a special taste to many savory dishes. I make a roast with mushrooms, stewed in milk, the taste is also incomparable. And stewed meat for the first time - delicious! I stewed it deliberately to leave more liquid, and yesterday it went with a bang with a spider web vermicelli, and today with mashed potatoes.
I also want to try pork in milk.
