  • Rinse peaches with hot water, cut into large slices, cover with sugar, cover with a towel, and leave overnight to extract juice.
  • Put a saucepan with the mass on the fire, gradually bring to a boil, dissolve the sugar, boil for about 15-20 minutes over medium heat, so that the berries are soaked in sugar syrup.
  • Set aside the pan and add citrus fruits grated coarsely on a vegetable cutter to the hot syrup - orange, lemon, grapefruit, and without removing the skin and white membranes, remove only the seeds. Leave the mass to infuse for a day.
  • We put the pan on the fire, bring it slowly to a boil, and cook on medium heat for about 15-20 minutes, until the fruit is boiled. Stir the mass periodically so that it does not burn. We set the pan aside for another day. During this time, there is a further heating of the fruit mass, the release of its own pectin from citrus fruits.
  • Put the pan on the fire again, bring it to a boil, then reduce the heat to medium-low, and boil the jam until cooked, until, when stirring with a spatula, a large long strip of clean bottom will remain at the bottom. The jam will thicken, the liquid must be evaporated.
  • Put the finished jam into clean jars, close the lids and put on the lids until it cools completely. Store jars of jam in a regular room.

It is possible that bitterness depends on the lemons and grapefruits themselves, it happens. Try to choose them with a thin crust.
Or you can divide the lemon zest separately, and separate citrus slices, then you will have to remove the white thick part between the zest and the pulp.
