Pork tagine with chickpeas and vegetables

Ingredients

Chickpea 1-2 handfuls
Pork 800g.
Garlic 4 tooth.
Bulb onions 4 things.
Vegetables (I have carrots, peppers) taste
Salt, pepper, spices taste
Water 80g.
Pitted olives 125g.
Ghee for frying

Cooking method

  • Soak the chickpeas overnight in the tajin. Drain the water before cooking, rinse the chickpeas.
  • Cut the meat into large pieces, fry in a cast-iron skillet in ghee until golden brown on both sides.
  • In the same frying pan, fry the garlic cloves and 4-part onion.
  • Put the meat on top of the chickpeas. Season with salt, pepper, sprinkle.
  • Put coarsely chopped vegetables and olives on top. I had carrots and peppers. The larger and more varied the vegetables, the tastier. The amount depends on the size of the tagine.
  • Season with salt, sprinkle to taste.
  • Pour in water, close the lid. Put in a cold oven and simmer for 2-3 hours at 180-200C.

No, I didn't open it - this is the main rule of cooking. Water condenses from the lid and returns back.

I cooked in a ceramic, so-called, microwave oven, 1 liter. Everything fit perfectly, oddly enough (I had about 500 grams of pork tenderloin, the rest was about the same as in the recipe). Truth without the olives. It wasn't there. I remembered them too late. But even without them, they knew nothing about it. Tumbled in the oven for 2.5 hours. Delicious! THANK YOU!
