Pie with salmon, broccoli and cottage cheese

Ingredients

First you need to cook
shortbread dough:
Wheat flour 1 tbsp.
with a slide
Cold water 3 tbsp. l.
Salt 1/2 tsp
Butter 100 g
Filling:
Salmon (trout) slices
cold smoked
150 g
Broccoli 250 g
Sour cream of any fat content to your taste 1 tbsp.
Fatty cottage cheese 150 g
Egg 3 pcs.
Pepper

Cooking method

  • Shortbread dough is known to love the cold. In this regard, my little trick (really chops butter and flour into crumbs) I almost always have butter in my freezer. I buy it in reserve so that it does not suddenly end. So I rub this ice cream butter on a grater and then mix it with flour. Then all this must be quickly mixed with your hands so that the dough becomes homogeneous (absorbed the crumbs) and send it to the refrigerator for 1 hour. Then roll it out, make a side, line it with parchment or foil, let it stand for 20-30 minutes in the refrigerator (just preheat the oven), cover with dry beans or peas and bake at 200 grams for 10 minutes.
  • Disassemble the broccoli into inflorescences and boil for 5 minutes. In the original - steamed. I did, but I don't think there will be a terrible horror if you boil in water. You can take cauliflower, including ice cream. It doesn't need to be boiled at all, which is very good. But I did it out of pedantry with broccoli. Now you need to put broccoli, salmon slices on the finished shortcrust pastry base and pour in a homogeneous mixture of cottage cheese, eggs and sour cream with the addition of pepper. At this stage I had a puncture, because when everything was already ready to complete the masterpiece, it turned out that I had forgotten to buy cottage cheese. I thought I had enough blow, but searching the refrigerator brought me to my senses: I found a can of Philadelphia cream cheese! : Connie_tapping: Made with him. I am sure that the mixture based on cottage cheese in consistency and taste resembles ... right, cheesecake (cottage cheese pie). But the same mixture based on Philadelphia is very similar to cheesecake, but naturally unsweetened. I think both options are very similar and delicious. With Philadelphia - I'll say for sure - phenomenal and magical ... In general, bake cabbage and salmon with a mixture for 25-30 minutes at 180 degrees ...
  • And now, do not give in to the temptation of something to swell over the norm. Especially salmon - its quantity - the most it! Otherwise, she will score the rest of the notes. And do not salt if you use Philadelphia - the fish and cheese are already salty enough, you can overdo it ...

Note

The recipe is taken from the Deli book. I assumed from the combination of products that it would be delicious. But it turned out to be very tasty and exquisite ... It tastes soft, unobtrusive and very elegant ...

Sonadora
Scarecrow, Thank you!
The cake is delicious! Philadelphia was not in the store, she took a jar of Almetta.
Pie with salmon, broccoli and cottage cheese

The only thing is that opinions in our house were divided while eating the pie. My husband and son liked everything as it is, but the taste of smoking in the fish interfered a little. I think, can I put fresh fish next time?
Scarecrow
Well Duc to your taste, you can change anything and how you want - the main thing is that it was delicious for you. For me personally, it is the smoked salmon that should be, as this flavor adds piquancy.

Scarecrow thank you very much for the recipe! It's really tasty and unusual.I used ordinary cottage cheese in a jar of 15%, scrolled it along with eggs and sour cream in a mixer, it turned out to be a very delicate cream, broccoli baked in this cream is very tasty in itself, and the fish gives a peculiar zest. But I think that with fresh fish it will be very even

Natasha, thanks, everything was as you wrote - "phenomenal and magical ..."
Especially for the first time, which could not be captured: at work, my husband urgently demanded an anniversary tea, and since we usually do not celebrate his DR there, we had to urgently come up with something salty the day before, with sweet vegetarians it is easier
Well, your pie came out of the bookmarks ... I saw it for a long time in the Grocery Store, but there are such ambushes that I would not go to the experiment myself ... But with your light hand, that is, an approving tasting, I decided to bake it ... And I didn’t regret it!
In the photo - this is already a double-tasting, I liked it so much that I recently repeated it for a related guest, but here the pie is simpler ... But to work for my husband it turned out to be outwardly simply charming, since I used not simple broccoli, but the topic is logarithmic (Husband is a candidate of physics and mathematics) ... Such a fractal and soft green ... But there was not enough time for the photo and there was no memory for that ...
Pie with salmon, broccoli and cottage cheese

Instead of sour cream and cottage cheese, again, a big senks for your advice with Philadelphia took 2 jars of Almette Cream. and a jar of Tatar Ricotta. It turned out - again your quote - "The taste is soft, unobtrusive and very elegant ..."
Yes, there were no deviations from the recipe, except for cream cheese and the fact that I always replace half the flour with ground almonds and half butter in shortbread cakes
Scarecrow
Oh-oh-oh-oh-oh ... This is the performance! The view is gorgeous !! And the thickness of the dough is equally perfect everywhere !! (yes, I examined everything carefully))). And my husband's colleagues, I hope, enjoyed it ...
Nagira
Thank you
Everyone really, really liked it, and, not without a riddle, they tried to guess what kind of green pyramids were there ...
And even dough - it's easy for two years with such a rolling pin ...
Pie with salmon, broccoli and cottage cheese
but about the gorgeous view ... this home ... and gorgeous with a mathematical cabbage, such nice, even, spiral pyramids looked great in the fill ... Yes, you probably know it

"Romanesco resembles cauliflower, but has a light green color, and the inflorescence is arranged almost on the principle of self-similarity, where the branching meristems form logarithmic spiral.
Romanesco shape is similar to natural fractal: each bud is made up of a set of smaller buds arranged in another logarithmic spiral ... Number of spirals in a Romanesco inflorescence approximated by Fibonacci numbers."
Here is such a cabbage
And it tastes softer and less perfumed ...
Scarecrow
Nagira,

And I have exactly the same))). I mean, a rolling pin.

And Romanesco cabbage is mesmerizingly beautiful, I love it too. She called the poor cabbage with all sorts of scientific words ...)))
Nagira
and it was not I who called it, but Wikipedia, I myself had fun when I read ...
I now suspect that you grow it yourself, and although I love it, for the pie - don't laugh, don't laugh - I chose heads of cabbage from my favorite frozen mixture called French for a long time ... and I didn't even know what was for your pie

ScarecrowNatasha, well, I don’t understand, people grind this pie in silence? I would write every day how delicious it is. Today is Sunday, shops are far away (I live outside the city) - I scratched my freezer and refrigerator and voila! Frozen salmon bellies. 30 grams of smoked trout, broccoli, leftover sour cream and a mixture of cottage cheese with curd cheese (and a couple of tablespoons of pine nuts lying around were not at all superfluous). At the exit - it is divinely crispy dough with the most delicate filling. I even took a chance and didn't bake the dough separately, I just sprinkled it with starch and laid out the filling. The result is great, thank you very much!
