Ingredients

Milk 300 ml
Fresh yeast 50 g
Butter 100 g
Sugar 2 tbsp. l.
Salt pinch
Flour 600 g
Eggs 3 pcs.
Cabbage 500 g
Salt 1 tbsp. l.
Bulb onions 1 onion
Vegetable oil 50 ml

Cooking method

  • I prepare the dough in KhP.
  • I heat milk and breed yeast. I pour the mixture into the HP. I add butter in pieces. I pour in sugar, add a pinch of salt, flour. I turn on the "Dough" mode.
  • Let me pass the test twice. That is, the first rise, then I knead the dough in a bucket with a spatula, then the second rise. I must say right away that the dough is reactive (50 g of yeast), and rises very well.
  • While the dough comes up, I prepare the filling.
  • Hard-boiled eggs, cool. Finely chop the cabbage and grind it with salt. I leave it for 10 minutes. Peel the onion and chop it finely.
  • Pour vegetable oil into a frying pan and lightly fry the onion in it. I squeeze the cabbage and add to the pan with onions. I fry for another 5 minutes. Cooling down. Peel eggs, cut and mix with cabbage.
  • I roll out the dough in the middle and spread the filling. I cut the edges of the dough into strips and alternately cover the filling with them to make a braid. I grease the surface with milk.

Time for preparing:

I bake for about 50 minutes.

Cooking program:

I heat the oven to 180 C.

When I made a braid for the first time, I was worried about the amount of yeast, especially that its taste will remain in the finished braid. But to my surprise, nothing like that.

In Soviet times, in Moscow, 50 grams of yeast was put on 1 kg of flour. Now I don't know how .. but 50 grams of yeast per 600 grams of flour is too much. I usually put 10 grams of Israeli pressed yeast on 500 grams of flour, if the dough is fatty, then 15 grams.

I also counted from these considerations when "worried". But the dough is, rather, from the category of "quick yeast" - it just rises for an hour in my oven.

It's still a lot, try to subtract at least 25 grams, it should also rise in an hour, meaning there is extra yeast

For the dough, I took half a measure of all the ingredients, less yeast (10g), there was no milk, instead I took the whey left over from the curd, and instead of eggs - feta cheese.
Such delicious food !!!

Maybe you need to leave a longer piece of dough at the end of the braid?

I tuck them under the wicker - then everything turns out well. But in general, - this is not so important, - the main thing is that it is tasty, and is gobbled up faster than braided ...
