"Orange jam" from carrots

Orange carrot jam

Ingredients

Carrot 500 g
(net weight)
Sugar 450 g
Juice and zest of one lemon

Cooking method

  • 1. Boil carrots in two glasses of water, adding juice and zest of one lemon.
  • 2. Puree carrots with sugar and carrot broth (200 ml.). Cook for about 45 minutes.
  • 3. Add vanilla sugar. Arrange in jars.

Note

It turned out to be a kind of yummy, cheerful orange color. There was a slight deviation from the recipe on my part. I added lemon juice when puréing carrots (50 ml juice + 150 ml carrot broth). Since I was making the jam late last night, I mashed the carrots with a wooden crush (I liked it even better, through a blender I would make a puree similar to baby food, but also very tasty).
Try it, delicious! Suitable even for those who do not like carrots, since they are difficult to recognize in taste.
