Products:
1 kg of watermelon pulp, chopped, pitted and without rind; 40 ml of balsamic vinegar, or apple cider, or white wine; 0.5 lemon juice; 2 tbsp. l. lemon zest; 1 tbsp. l. grated fresh ginger; on the tip of a knife of ground black pepper; 0.5 bunch fresh mint; 400 g sugar; 1h l. agar

There is no way without agar (pectin) - you get liquid jam. Of course, you can boil it for a long time, but I don't like that. Bring to a boil three times, cool, grind in a blender and cook for another 10 minutes and that's it
