I always use these paddles. I roll out the dough, dust the shoulder blades with flour, put them under the dough, spread the filling and transfer to the stone .. nothing ever stuck.

I made a calzone with Adyghe cheese in Ferrari in 4 minutes. With yolk, I think it will work if the oven is a little less. I use the paddles all the time with both Ferrari and Princesses.
