Soft potato buns

Ingredients

Dough:
dry yeast 3 g
wheat flour c. from. 270 g
milk 130 g
Boiled potatoes 100 g
salt 6 g
sugar 15 g
butter 25 g
Additionally:
milk 1.5 tbsp. l
sesame and flax seed mixture 2 tbsp. l

Cooking method

  • Mix yeast with flour (1 tbsp. L leave), add warm milk, salt, sugar and mashed potatoes.
  • Knead for 8-10 minutes. Add remaining flour and softened butter. The dough is soft, slightly sticky due to the potatoes. The bucket is not smeared along the bottom.
  • Soft potato buns
  • Dust the table with flour. Lay out the dough (immediately after kneading), divide into 8 equal parts.
  • Form round rolls. Place in a baking paper lined dish.
  • Tighten the rolls with plastic foil and put in the refrigerator for 10-12 hours.
  • Let the dough pieces warm up at room temperature for 1.5-2 hours.
  • Before sending to the oven, grease the top of the rolls with milk and sprinkle with sesame seeds.
  • Bake in an oven preheated to 230C (convection 210C) degrees with steam for the first 7-8 minutes, then lower the temperature to 190C (convection 170C) degrees and bring the rolls to readiness.

Potato broth is the water in which potatoes were boiled. It can be used in baked goods instead of water (milk or whey).

I really grossly violated the technology - I urgently needed hamburger buns, so I put the dough on the battery for 2 hours
I still had baked potatoes - rubbed them on a fine grater (in the finished rolls it was not visible or audible, although the pieces were noticeable in the dough)
instead of butter used homemade butter cream, 35-40 grams put
the buns turned out to be just airy! reminded "bays from Daria Zvek"
the only "but" - they seemed a little salty to me ... maybe because with such softness you expect more sweetness from the bun

Py. Sy. it was a pity to translate into hamburgers. they would be for tea ... with jam ...
