Ingredients

To prepare mushrooms:

Citric acid (optional)
Coarse salt
For canning:
For 1 can of 0.5 l:
Vinegar 9% 8 ml
Hot water 100 ml
Boiled mushrooms

Cooking method

  • What if you suddenly have a lot of mushrooms?
  • You have already salted and pickled them, frozen them, sculpted pies, ate whole pans of fried, but mushrooms still do not end ?!
  • Or, for example, you are not a fan of pickled or salted mushrooms. And you prefer exclusively fried. But there is no room in the freezer to just put in a few bags for your winter treat.
  • In both cases, this recipe will help out! Boiled mushrooms are simply canned with a very small amount of vinegar; in winter, any dishes that require fresh mushrooms can be prepared from such a blank: caviar, cutlets, filling for pies, you can stew and fry.
  • The recipe is not complicated at all. I did it many times. Mushrooms keep well at room temperature even for several years. It is very comfortable.
  • Cooking.
  • Almost any mushrooms are suitable for such canning: porcini, honey mushrooms, boletus, boletus. (I have honey agarics in the photo.)
  • I sort out the mushrooms, rinse them thoroughly.
  • I pour 1-1.5 liters of water into a large saucepan, add (for honey agarics) about ¼ tsp. citric acid (then honey mushrooms do not darken, remain rather light). Boil mushrooms for 5 minutes. I pour out the water.
  • Pour coarse salt (40 g per 1 liter of water) into a saucepan with clean water and cook the mushrooms for 20-25 minutes. (I then use this water for soups, sauces, etc.) I put the mushrooms in a colander, after having poured boiling water over it.
  • I pour clean hot water from a teapot * (100 ml) into sterile jars, add vinegar (8 ml), put the honey mushroom caps tightly. I cover with sterile lids.
  • I sterilize in boiling water for 20-25 minutes. Roll up, turn over and wrap the newspaper in several layers until it cools.
  • Having opened the jar in winter, in order to completely remove the slight smell of vinegar, I rinse the mushrooms and boil them for 5 minutes in clean water. Then I use it for its intended purpose.
  • * on a faceted glass I make a mark of 100 ml with a marker, this allows you to pour hot water from the kettle.

Note

We have collected a lot of honey agarics this year. Small and medium ones were pickled and salted, but larger ones were prepared in this way. The recipe was cut out of the “Friend of the House” newspaper a long time ago. The author used 5% vinegar (3 tsp), I replaced it with 9%.

Yes, Lenochka has a lot of mushrooms. We just live far from the forest, but we don't have our own car. The youngest is still only 3 years old, so it's difficult in public.We are waiting for when we grow up - we need mushroom rain for boys!
