Coconut Raspberry Cheesecake

Ingredients

shortbread 250 g
butter 100 g
light honey 2 tbsp
sheet gelatin / powder 4 pcs / 15 g
cottage cheese 400 g
cream 33-35% 400 ml
coconut milk 400 ml
powdered sugar 200 g
frozen raspberries 300 g
coconut flakes 15 g

Cooking method

  • Line a baking dish 25 * 35 * 5 cm in size with parchment. Grind cookies in a blender and add melted butter and honey to it. Stir and lay in an even layer into the mold. Send to refrigerator.
  • Coconut Raspberry Cheesecake
  • Pour gelatin (I have sheet) with cold water.
  • Beat curd cheese with a mixer with cream, add coconut milk, powdered sugar and beat for another 5 minutes.
  • Squeeze the gelatin, heat until dissolved and add a little whipped mixture to it. Stir well and pour into the bulk. Add raspberries there, kneading them a little, leaving a few berries for decoration.
  • Place the creamy filling over the cookie base, smooth, garnish with raspberries and sprinkle with coconut.
