Background
Recently I made mayonnaise without eggs.
https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=24514.0
It turns out that vegetable oil is very easy to emulsify and without eggs.

An inner voice told me for a long time that Nutella should be made from vegetable oil.
I climbed a little in the internet to find a recipe for homemade nutella, but everywhere it was suggested to cook milk with flour, add cocoa
I decided to risk it myself.
Climbed to the site 🔗

The recipe for nutella is written there
Nutella hazelnut paste with added cocoa.
Ingredients: sugar, vegetable oil, hazelnuts, fat-free cocoa,
skimmed milk powder, lactose, whey powder, emulsifier,
flavoring.

In general, they do it according to the principle of mayonnaise.

great recipe, I will definitely try. And add milk powder right away?
natamylove
along with cocoa
-it as a thickener goes to the mixture.

I did it without him, but with him a denser mixture turns out
Lyalya Toy
natamylove thanks for the wonderful recipe. That's what I did.
Made with homemade milk.

Well, but I didn't add it yesterday, I decided that it goes like a sucker ... And I didn't have any nuts either. I will count the days before buying a blender (you still have to choose)
Nataly_rz
natamylove, thanks for putting it in a separate recipe. I have been using your idea for a long time, the last most lazy recipe is mixing condensed milk, cocoa and butter. It turns out great. Instead of nuts, I decided to try replacing part of the butter with nut oil - dealing with peanuts, I didn't like it, it had a strong pungent taste and smell.
This nutella is very popular with everyone who tries it, of course no one believes that it is just in vegetable oil. Even at the request of a friend, I made her using my technique from her products. But personally, this result disappointed me: it turned out quite differently. I sin on purchased condensed milk, so if you don't make homemade condensed milk, it's better to use milk and milk powder (in principle, the same ingredients from which I make condensed milk)

Thank you very much for the recipe! In general, I have nothing to do with cooking, I read it and did it, everything worked out, just a miracle! I don’t know how to add a photo, but everything is simple, fast and delicious!

Natasha, thanks for the delicious recipe. Although I did it not without adventures, it turned out delicious, airy, tender. Walnuts (toasted, ground) added from the soul Thanks again!
milf
natamylove , thanks for the recipe and for putting it as a separate topic, otherwise after the first preparation I looked for it again - I could hardly find it. It turns out tasteful, my men eat it in no time.
natamylove

oh tomorrow I will do it again

thank you girls for the kind words!

afnsvjul
natamylove, but how much paste is obtained from so many products?
And another question, be sure to beat with a blender in a glass so that there is no gap between the "foot" and the walls, or is it possible in another vessel?
natamylove
I whipped it strictly in a blender - since the transformation into an oil emulsion is a capricious matter and I did not risk it.
and how much it turned out, I didn’t even count it, there was a lot and it suited me.

weight can be calculated
-about 500 grams

next time I'll weigh
afnsvjul
Thank you!!! Then another question - how big is your glass? Does everything fit into him at once? And then everyone's blenders are different, it seems to me that the whole set of products will not fit into my glass. Therefore, I want to estimate the volume, can I divide it by two at once?
natamylove
I have a glass of 800 ml

so everything fit
afnsvjul
well, then for sure, mine will not fit. I'll try to start with half a portion. Thanks again!!!
izumka
natamylove , thanks from our whole family for such a yummy! I didn't have any powdered sugar on hand, so I heated the milk, added sugar, and stirred until it dissolved. Then she thought about it and poured cocoa into the hot milk. And when it cooled down, beat it with a blender with butter and at the end added ground nuts. Delicious (tastier than shop), cheap and fast!
natamylove
oh super !!!!!! technology is different
I use this Nutella cream for the new year for filling cap cakes

just a lot of it
afnsvjul
izumka, if you replace icing sugar with sugar, then how much sugar did you add? And then I also do not always have powdered sugar. And the electronic husband categorically does not allow grinding on a coffee grinder
milf
can i answer? the first time I cooked milk with cocoa and 4 tablespoons of sugar, and then whipped the cooled mass. The second time, I put 3 spoons (of course with a mountain, but 4 too hefty sweet), and it was well, very lazy and wanted to sleep, and put everything in a glass at once, did not cook anything, everything whipped and dissolved and it was super. Om-Nom-nom
afnsvjul
Oh, great, well, just a very super-lazy version of Nutella - this is just for me and my sweet tooth. And I only have time to cook condensed milk, now Nutella will replace them. Thanks a lot, girls !!!!

Why can't sugar be in a coffee grinder?
Elya_lug
natamylove, what an interesting recipe, I will definitely do it. Tell me, how can you use a layer in a cake?
milf
I didn't use it as a layer, but I smeared a homemade cake on top.
I also don’t make powdered sugar in a coffee grinder, because I have it with millstones, and from the high temperature the sugar will start to melt and a kirdyk will come to her, but why in the usual one is not interesting to me either.
RainForest
Great recipe - all ingenious is simple. Mine are delighted.

I did it with a blender - first I heated the milk in the microwave, poured cocoa and sugar into it (I have bitter cocoa powder and wanted it to brew).

There was no milk powder - I replaced it with dry baby food (milk mixture with oatmeal) and - half of the sugar specified in the recipe. Little by little butter was poured into the milk-chocolate mixture - and it thickened.

Delicious! Thank you!

[quote And why can't sugar be in a coffee grinder?] [/ quote]

If you grind, for example, sugar, then the powdered sugar settles on the brushes in the coffee grinder motor, clogs them, and they stop working.

afnsvjul, sorry, but you can check with your spouse - and when you grind coffee, it also settles in the form of dust on the brushes ??? After all, according to the functionality, the coffee grinder should grind ?? It seems that powdered sugar and ground coffee are not very different in size ... I have a Bosh coffee grinder and I literally grind everything on it.
RainForest
I am not allowed either. With the millstone everything is clear, everything will stick there. And in this, too, there is a chance that fine dust will get into the engine and the difference is that coffee is dry powder and sugar is sticky. And in the blender the same story - it will scratch the plastic bowl.

But sometimes I get a little stranded when no one sees. In this recipe, sugar was poured, not powder. (too lazy to grind)
Happiness
Thank you very much for the recipe, I have been making mayonnaise according to this recipe for a long time, but somehow I did not think of sweets.
MNN
It turned out very tasty! Thank you so much! I went, with your permission, to tell everyone the recipe, well, very tasty thanks for sharing) I tried other recipes, such as custard, b-rrrr
This one is a completely different matter!
natamylove
yeah-yama
Elya_lug
Natasha, I made it too, very tasty. I tried it with walnuts and peanuts, with peanuts tastier. Only I had a problem with whipping. At first I didn’t want to thicken, and then in 10 seconds the oil thickened and bounced off. I carefully merged it (50 grams). I wonder what the problem is, have you come across this? Is there a difference in temperature between milk (from the refrigerator) and butter?
MNN
and my milk was even warm, I dissolved the sugar there, it was beaten so in 1 second, into such a thick mass that I was a little scared for a blender
dancer
Tell me, if you use slab chocolate instead of cocoa, will you get Nutella?
Lyalya Toy
dancer of course it will. But I, for myself, would like to clarify. What kind of chocolate do you want to use? Melt or grate?
milf
not yet natamylove - the owner of the topic, I will answer if she does not mind.
Of course you can, if you first melt the chocolate with milk and sugar or powder, you will get a kind of drinking hot chocolate. just before whipping, be sure to cool it.
dancer
Lyalya Toy , yes I wanted to melt.
milf , very timely tips ...
dancer
.
Lyalya Toy
dancer Thank you. I've already thought to grate it on a fine grater. Need to try.

Chocolate-nut paste
I added hazelnuts and walnuts, made them in a food processor. It was hard for him, but I helped
The only drawback is that I can't eat much, because I know how much sunflower oil there is
natamylove
Well, yes, as you don’t know the composition of the product, it’s so good, but as you know, you already think
masha666
Please tell me, can you still use it as an interlayer in a cake !? Let's say a biscuit (white or chocolate) + Nutella + different nuts in each layer! What do you think!?
natamylove
Mashenka, I don’t know, I think you need to try

can anyone tried it?
Elya_lug
I think this is a more homemade option for bread or rolls.
Gurim
Hello! I really like your Nutella (I found out about her on "Povarenka", followed the link here) My friends do not have a blender and they have adapted to make it with a mixer, changing the order of bookmarking products. That is, the oil is added at the very end, very slowly, literally drop by drop. Maybe someone will come in handy ...
MNN
I told the cooks about your Nutella
THANKS AGAIN
I'll go and add some recommendations for those who don't have a blender

And instead of sugar, they added 2 tablespoons of sorbitol powder for half a serving, and it turned out to be an excellent paste for diabetics
Maybe someone will come in handy)
litichka80
Well, a wonderful recipe! 5 minutes and a wonderful chocolate paste is ready. I didn't have any nuts. I can imagine how delicious it is with nuts.
knob

Natasha, thank you one more. I did it several times. It takes a long time to whip, but I also coped with this problem - hold the butter in the freezer and whisk quickly. I do the same when whipping mayonnaise.
The only drawback is that I can't eat much, because I know how much sunflower oil there is

[/ quote]

For me, this is also the only drawback. Thanks again

Can I answer! I made a layer in the cake. Very tasty and beautiful, it is not absorbed into the cake, it lies in a layer. Thank you so much for the recipe! Just great! Very fast, tasty and cheap (which is very important). Simply
Oyka
Advise the brand of vegetable oil, otherwise I got Nutella with a pronounced sunflower taste, although the oil seems to be refined and deodorized - "Sloboda", when frying, in the salad did not give this taste
afnsvjul
thanks for the recipe! It turned out very tasty !!!! Only I have a question, and which glass in the recipe is 200 or 250 ml?
