Fermented tea made from leaves of garden and wild plants (master class) (page 34)

Elena Kadiewa
Everything, I got into it! but I live in the country, email. the stove was thrown out a week ago, it took up a lot of space, tell me how to dry it in an airfryer. I made my first tea today, it’s fermenting, but it’s cold, I put it in a bag and under a pillow, it’s only 13 degrees outside, can I take it to the greenhouse? Ivan collect tea, found it well in abandoned dachas, it still blooms. please tell me about the airfryer, otherwise there is no time to look for blanks in full swing, but there are so many mushrooms in the forest, and the forest is across the path, a minute's walk

Elena, of course we must go to his greenhouse! at this temperature, the fermentation process does not take place. Where is it +13 degrees and mushrooms are full !!! I want to be with you!

Mary Poppins, I am glad that you began to get tea. I am sure that it will be the same in the future. How long did you ferment the tea?
...
We got a strong tasty smell - you need to stop it.
Oppression set, fermentation - 10-12 hours

The smell was delicious, strong, but somehow nutty.
the batch is small, the pan is large, should not have been steamed. Or maybe I just compare with granular .. And it will be better to settle.

I'll try to make another sheet.

Girls, did anyone make tea from strawberries - not strawberries, strawberries - not strawberries? ... In general, I have a large garden. And this "don't know what" grows all over the garden. The leaves are larger than strawberry leaves, but smaller than strawberry leaves. In spring it blooms like a strawberry-strawberry, but no fruit. Lyudmilochka, this is your degenerate high-quality strawberry (garden strawberry according to the rules).

Mary Poppinswill definitely be better. Your fermentation time is normal. And there was oppression. I also like granular more, so I don't mess with the sheet. Try it, there will be something to compare with.

elena kadiewa, sorry, did not immediately answer your question about the airfryer. And even now I won't answer much, since I don't have it, so I didn't dry it in it. But the girls dried them, wrote that they were good at it. True, without details, so I won't tell you how they did it. Well, you know this unit. Try it, it should work.

Damn, I only make preparations in it, for this I bought it, but last year I dried mushrooms, I really don't know what to do with tea. And I still went to the leaves of narwhal and flowers, I will make honey.
Galina Iv.
Yesterday there were guests at the dacha, they took a steam bath, a friend said: how good, that would be honey !!! and I immediately fussed in advance and ran into the house - here's some honey .. she didn't understand anything .... red honey, as a result, she could not be torn from it and she left with a packet of Ivan tea leaves))), which means that there is one more tea in our country

Well done, that you are engaged in tea. That's right, tear what you can. There is never too much tea. Just be careful - take care of yourself.
Quite often people tell me that at the very moment when they pick up the phone to call me - I call them. This is about telepathy
And about carefully - we already have nothing, the front has withdrawn, now it is safe. Only it was so hot that the leaves turned yellow and dried out on almost everything from which I wanted to pick them up.

Such tea enthusiasm has been awakened by the people! Luda, you’ll put the tea companies on the blades - well, you turned away such a crowd of consumers!

I don’t find if anyone tried to "ferment" grape leaves?
At the dacha, we have a huge bush of white wine grapes, it grows without watering, fertilizing and processing as bad! Everything has already burned out into dust, but at least henna! (mmm)
His leaves did not know chemistry, for raw materials - the very thing. Just what can come of it? Then someone voted for the grapes, share your impressions, please!

elena kadiewa, I dried all the tea in the grill or rather I have a hotter lid. So I did this: tea on a baking sheet - on top of a round cake mold on it, two skewers on them, the grill lid (the lid is slightly open by 1 cm) set the temperature to 125, and then when they decided to fry the tea, set it to 150 degrees Then the temperature was reduced for 30 minutes as in the recipe.

, I was so captured by this process that I am constantly working with tea. Today I cut the leaves of the grapes. pears, apple trees, blackberries, a little currant. I wanted to do it separately, but the grapes are juicy, and the pear is dry (everything is after freezing), I mixed everything, but 10 pallets won't fit in Isidri at a time. The smell in the apartment is very pleasant, but it is very difficult to dry now, everything is hot to the limit, it may turn out to dry at least part of it at night.

Tatyana, from grapes I made tea. I really liked it, I left it as a mono-tea, the swelling on my legs began to decrease.I wrote a review, but I don't remember on which page. I had three varieties of grapes at the same time.

I report on grape tea.

She promised to unsubscribe in two days, but my soul could not stand it, suddenly it’s delicious, the neighbor will again pick off the young growth and throw everything away.

Of all the tea I have made, this is the easiest option. I am writing as I did. I was going to dry the leaves without washing, but then I find out that two weeks ago a neighbor sprayed it with copper sulfate, there were no traces on the leaves, so I washed it all the same. She wrapped it in a cloth for the night, and in the morning the cloth turned out to be hot, put everything in bags and in the freezer. They lay for a day, left the packages in the room (+ 28 degrees) at night, opened them in the morning, and a pleasant fruity aroma appeared. The leaves are pliable, do not break, I took the bunch in my hands and twisted it (as we wring out the laundry) until the juice appears. Then she cut it into rolls, unwrapped it and walked through it again with a knife. I put everything in a bowl and under oppression, it costs 2 hours. Part of the leaves was dried in a frying pan on gas until completely dry. After cooling down, I brewed tea, but now I tried the infused tea leaves for an hour.
Grape tea is a wonderful mono tea!The color is lemon-yellow, transparent, with a good sourness, there is sweetness, a very light bitterness is felt, a light tart taste remains on the tongue. Rating 5+ Of those teas that I did, grapes are now in first place.
I have grapes of three different varieties, whether it is a mixture or one of some kind, I don’t know, but what is very tasty is for sure. Yes, my head sweated for the first time after drinking tea (this is usually the case with green tea).

Tatyana, here is my report on tea.

And even today I rode a bike for Ivan-tea. Found under a slope in the shade. The leaves are of course battered, but green.

Ksyusha, enlighten me about blackberries. Is she gardening? In Kazakhstan, blackberries did not grow in our gardens, because there are so many wild blackberries growing in the mountains near Alma-Ata! She was collected. The jam from it is delicious! We didn't cook it, we just made it with sugar 2: 1. But she's so prickly! While you collect it, all your fingers are spiny. And in their dachas, people grew ezhemalina - a hybrid of raspberries and blackberries. The berries are huge.
And here in Russia what is she like? And how did you collect the leaves? They are prickly!
I think the tea should turn out great. Did you twist it in a meat grinder?

The leaves are prickly, I cut young ones with scissors. Why am I led to them, they are too green and juicy against the background of all the other yellowed plants. Spun in a meat grinder. Granules disintegrated of course. but in general it turned out not bad.

And if you wither, and then freeze, unfreeze and twist? I think it will be better. In your tea, for one apple tree, there are two crumbling scents - raspberries and blackberries. The apple tree alone cannot cope. If only 1: 1, then there would be less placers ... Well, I think it's okay - the tea will still turn out good ...

By the way, you haven't told us anything about sea buckthorn yet. How did you get tea?
People, tea is not a favorite. Well, it does not have that fruity note for which I fell so fond of stone fruits - cherries, thorns ...
The smell is more like medicinal or something ... The taste is nothing, soft, but inexpressive. The color gives off well - first olive, then quite a tea shade (well, in the sense of traditional black tea), but quite light.
My preliminary conclusion is that you can make tea and probably should, but rather as a "dancer" for something. But for what - you need to think. Or try it.
By the way, sea buckthorn leaves, contrary to expectations, gathered without problems. The thorns grow higher along the branch, and the young growth is smoothed out remarkably. I did not try to twist it (well, it is more convenient for me to do it through freezing!), But the leaf is dry, even after freezing it gave up tight moisture, so, probably, it will be reluctant to granulate.

BUT! I will make the final conclusion in a month. Look how my raspberries have changed, and at first they smelled like brooms.

Galina Iv., I will try to ask you as a phyto-witch - do you know what is in grapes that can cause such an effect?
Tanya, I'm not Galina, but I could not resist, Googled about the leaves of grapes. Treasure, in general:

Nutritional value of grape leaves

Despite the low calorie content (13 calories per 1 cup), it is a very healthy product due to its high amount of nutrients.

One of the reasons grape leaves are added to a variety of dishes is their high fiber content (1.5 g per cup or 5-7% DV for an adult). Dietary fiber fills the stomach, slows down digestion and slows down the release of sugar into the blood. Thanks to this, grape leaves allow you to stay full longer and not experience hunger pangs.

It is also a good source of fat-soluble vitamins A (3.853 IU per serving) and K (15.2 mcg). They strengthen the immune system, protect cells from free radical attack, keep skin, bones and digestive tract healthy, improve vision and control blood clotting.

Your bones, teeth, nerves and muscles are in dire need of calcium. One cup of grape leaves contains 5 mcg of calcium, or 5% of the daily value, and 0.37 mg of iron, which is needed to form red blood cells.

Antioxidants in grape leaves

Vitamin A (alternatively called retinol) in grape leaves has antioxidant activity. In other words, it provides your body with many benefits in the fight against free radicals: it strengthens vision and the immune system, prevents the development of chronic diseases and fights premature aging.

Grape leaves also contain stilbene synthase - a special enzyme, without which it is impossible to produce another powerful antioxidant resveratrol. As you know, resveratrol or its precursors are found in many parts of the plant, from the vine to grape seeds.

Let's not forget about omega-3 and omega-6 fatty acids, of which there are also a lot of grape leaves. Antioxidants from this group of substances reduce the risk of developing heart disease (for example, strokes), arthritis, protect against depression, prostate and breast cancer, and colon cancer.

Useful properties of grape leaves

Indigenous peoples of North America used grapevine tea to treat diarrhea, hepatitis, abdominal pain, and thrush. And compresses from grape leaves soothed chest pains, rheumatic and headaches.
1. For the oral cavity. It turns out that it is worth chewing some grape leaves to reduce the growth and development of microbes in the oral cavity, including those that cause tooth decay and periodontal disease. Scientists came to this conclusion when they managed to obtain three powerful antimicrobial compounds from the leaves and stems of grapes. Details can be found in Notes of Bioorganic and Medicinal Chemistry 2010. Grape leaves also help prevent plaque buildup.
2. For strong bones. The high concentration of calcium and vitamin K makes this product very beneficial for the musculoskeletal system. But that's not all. One serving of grape leaves contains 0.26 mg of manganese. This mineral helps the body synthesize specific proteins called proteoglycans, which are involved in the formation of healthy cartilage and bone tissue.
3. Grape leaves will also help with chronic venous insufficiency. They can be used in the diet of patients to relieve swelling of the legs, improve blood circulation and reduce associated pain.
4. From Alzheimer's disease you will be protected by chemicals that prevent the formation of plaque in the vessels of the brain and the death of nerve cells. True, this useful property of grape leaves has been tested so far exclusively on rats.

Grape leaf tea

This drink contains a huge amount of biologically active substances (flavonoids), including anthocyanins, quercetin, isoquercetin and oligomeric proanthocyanidins.

The astringent and homeostatic properties of tea made from dried leaves of red grapes have been known to the inhabitants of Europe for several centuries. This product has long been used in the treatment of diarrhea, hemorrhoids, menstrual bleeding, varicose veins, and other circulatory disorders.

Making tea from grape leaves is very simple. It is enough to pour boiling water over 1 teaspoon of dry leaves and let it brew for 5-10 minutes.

You can make "grape" tea at home. To do this, fold the fresh leaves in the form of envelopes and place in a vegetable dryer. Optimum drying temperature: 65 degrees Celsius. You can also use a regular, well-heated oven (before placing the leaves on the baking sheet, do not forget to turn it off).

On my own behalf, I will add that when I lived in Alma-Ata, from August to November every day our family ate at least 2 kg of grapes. I knew there was a lot of vitamin K in it - great for the heart. In general, we felt from him oh so good! So tea definitely needs to be made. And more!
I need to ask the neighbors. Their relatives in other villages grow grapes. I was even treated to. But utter sourness. But for tea you need to try to ask for leaves. Tomorrow I'll do it.

Eva3, what a beauty !! I missed. Did you make from leaves ?? How does it taste?
Omela, look at the 86th page, I described everything in detail there, so as not to repeat myself. Well, in general, now I'm starting to re-test all the teas of monthly exposure, the opinion is changing in many ways (I have not even voted again, I can not decide on the favorites). the first impression of the rose is positive. I still have it in the mix, there are 6 plants: chokeberry, rose, raspberry, pear, apple and quince, in approximately the same proportions. So I can’t say anything about the blackberry, I’m not familiar with mono tea, there is a raspberry and a very subtle rose in the smell, I can’t make out the rest, but of course it can because I know what is in the composition. I made tea on 26.07, so the first impression was positive, and for another I will wait a month.

Yes, roses and mine, not only with leaves, but also with buds, go under the snow (garden ones, of course). You of course look at your rose when ripping. We have because of the heat, and the ecology is probably because the leaves are all yellow spots, beaten. That's why I ripped off the young ones, they are very soft. Those that are older, they are tough, it seems to me that the taste will be different, I think it will be more tart, richer, but the smell may be less. Or maybe because of your more humid climate, it will just smell. Well, you shouldn't stand on ceremony with roses, as soon as they have faded, so you need to cut them, they put out new pagons. In winter, of course, you should not cut off too much, you never know, it will freeze, it is better to cut off all unnecessary in the spring. At the first flowering, my rose (it is a tea-transfer) has very large and full buds, it was she who bloomed so poorly in the heat.

True, closer to autumn I wanted to ask them for permission to rip off the leaves. When I "tested" the leaves, I didn't like them at all - they were dry, tough and odorless. So, let yourself grow calmly and further ...

Tanya, I'm not Galina, but I could not resist, Googled about the leaves of grapes. Treasure, in general:

Wow!
We grow a lot of grapes, even very much, but the cultivated varieties are capricious and unstable to fungal diseases, so they are treated with such preparations, which is then scary.
We bought our dacha last year in a state of disrepair - for 4 years we did nothing there. And among the desolation stood out a BUSH of grapes! In the fall, it turned out that he had given birth to a bunch of small tassels of white grapes of dubious taste. What I could collect - I dragged my father-in-law, he made a wonderful wine from this, it tastes like good port. I affectionately and contemptuously called him (the bush) "mongrel" until one of the neighbors enlightened me that this is a completely cultivated wine variety, but of a very old selection. It looks like Bianca.
I really respect him for his resilience. In the fall, she cut off mercilessly (in fact, this is all the care he received in 5 years), so this summer he swung more magnificently than before! He imposed brushes and hints - prepare, they say, cans, juice to make nadot! And he holds, does not drop anything, that's a hard worker!
And then he will share the leaves ... Clever girl!
