Fermented tea made from leaves of garden and wild plants (master class) (page 30)

Linadoc
Luda, superficially looks like a delphinium (genus ranunculus, in Latin Staphysagrium). But I could be wrong. And here is my cypress:
Fermented tea made from leaves of garden and wild plants (master class)
tsetse fly
Linadoc, cypress wah! And how many years did he grow out of a bone like that?
tsetse fly
Ludmila, this is definitely not a delphinium. A plant similar to this grows on the edges of the roads, only the flowers are very bright. I myself, literally a week ago, fiddled with relatives about the name, no one knows (
Lyudmila, for some reason I have problems with fireweed tea, the cans are starting to grow moldy. It dried well, then hung in a pillowcase on the loggia for two days, after 3 weeks. I checked the containers, and there is mold! What to do, throw away or dry out? Maybe this is due to humidity, our humidity is 85-98%

help, please, determine what kind of plant it is.
it's a hyssop!

And it seems to me that this is a Moldavian snakehead or Turkish lemon balm. It's just very difficult to see in detail in the photo.
Galina Iv.
Yes, the photo is not important, Lyudochka, give it to us larger!
The flowers there seem to be in the form of "cockerels", which means they really look like a snakehead.

Girls who made strawberry leaf tea? what scent should it have? Yesterday, late in the evening, I put it on fermentation, but the smell when slicing (after drying and freezing) is just grass-grass. I stood under a wet towel overnight, but there is no new smell. Is it worth keeping or drying further? Or throw it away, although it's a pity for the work, rubbed the corn while cutting with a knife, remembering that we will get dust in a meat grinder.

You mean you wilted, froze and that's it? cut with a knife and that's it?
Vladimirovna
Galina Iv., yes, at first it wilted, then I kept it in the freezer for two nights, and yesterday in the night I rolled it up and cut it very thinly, like Chinese noodles, squeezed it like cabbage and under oppression and under a wet towel. I felt the smell especially. Now I decided: I was, I was not, I put it to dry in the microwave on convection.
Galina Iv.
Vladimirovna, to throw it away is certainly not necessary! my opinion is not fermented ... well, it's okay, right now the smell will go when drying .. mmmm
Vladimirovna
Galina Iv., we are waiting, has been drying for almost an hour. By changing it so much that you have to dry it all day. It has been fermenting for more than 12 hours. And the whole Ashanovsky bag is tightly packed in the freezer. Here is called.
Galina Iv.
Vladimirovna, there is never too much tea !!! I certainly understood it!
hmm ..... parted in full. I'm on vacation tomorrow, too
Is that all you have Ivan tea?
Vladimirovna
Galina Iv., no, my neighbors cut off the strawberries and brought me two huge garbage bags for seagulls. She promised to give it already dried. If it does not appear as a strawberry, then I will mix it with something else so as not to hit: girl_pardon: face in the dirt.

Galina Iv.what a cool avatar
Galina Iv.
Oksana, from tomorrow for a week on vacation, so I will be at the dacha from dawn to dawn, like an ant, to work and twist teas
I wanted to show my true face
Loksa
vacation is cool - don't overwork, take care of yourself !!
Galina Iv.
no, Oksana, I always have everything in moderation, for example, only 3 beds, though 2 greenhouses))), the rest are lawns

Strawberries smell very good both during fermentation and drying. And after a while, some kind of fruit smell appears in the jar. This is one of my favorites. I just didn't understand why not through a meat grinder? It is perfectly granulated when dried. I just leave some leaves, I remove the cuttings. And if they have already frozen, then it seems to me that the granules will be even better. I did not freeze strawberries, but other prefabricated teas, after freezing, hold granules even better than just dried ones, well, at least for me.

And they also presented me with a bag of blackberries. Well, I didn’t do it in a monovariant, I added it to prefabricated teas, one simply dried, and the other after freezing. In appearance, these leaves did not frighten me with anything, everything went to the meat grinder with a bang. I can't understand why you are complaining about her so much that it is difficult to twist. My cherries, too, even in a monovariant are excellent. But quince (ordinary), this is something, a meat grinder is not something that groans, but it gets hot.

For example, I do not like granulated tea, before I am like this, only leaf
maybe I have like-minded people in this
ang-kay
Girls, hello! I haven't read the whole topic yet, but now I'm going to dry the cherries. Fermented for 7 hours, but the smell, as for me, is still leafy! How should they smell? Or else let them sour?
Galina Iv.
ang-kay, but how did you do it, that is, how did you twist it?
ang-kay
You can use "you". in the evening in the house I laid it out to dry, and in the morning I twisted it into a meat grinder. I took it and covered the container with a damp cloth. I heat the oven to 100.
Galina Iv.
I made cherries through the freezer, and then twisted them with my hands, there was immediately a "stone fruit aroma"
Galina Iv.
7 hours is not enough, I think, I ferment up to 20 hours sometimes (this is purely my personal opinion)
Again, IMHO: "dry", hard leaves I just freeze.
ang-kay
I don't smell like a bone, but the smell is strong, it seems to me that it has changed compared to the morning. It smells more like perfume. Or everyone has a different perception. There is no smell of drunk cherry.
Galina Iv.
ang-kay, I would hold it until the evening

I am guided by the author's comment about time, but there is a reservation. what could be more. I understand that it is better to let it be unworthy than to stop.

I'll hold it for a couple more hours. It's hot here. no matter how sour.

So is she already in the oven? If in the oven, then only dry. And next time you can hold it longer, there will be something to compare with. I really didn't hold it for more than 8-9 hours, I'm afraid of losing the smell.
Galina Iv.
ang-kay, it all depends on tastes, on preferences. I often didn’t succeed with time, that is, I didn’t manage to dry it on time, when I cut it, there was no smell, and as soon as I started to dry, it’s immediately aromatic !!!! And the tea tastes excellent. All with experience and your tastes.
Galina Iv.

No, not in the oven. Turned it off. Hold have a couple more hours in the room.
Girls, another question. We dry for an hour at 100, and then reduce to 50-60 and how much more does it dry? Will I be in time today or not? Someone dried parsley, dill, basil in this way?
Galina Iv.
Goodbye everyone, my dears! I ran on vacation, order, please, on August 7, a 3-ton carriage for transporting tea and me from the dacha, all good days and research in the field of Russian tea production

And it seems to me that this is a Moldavian snakehead
This is definitely a snakehead, I planted it one-year-old, but there is self-seeding, we don't. I only raised him once in a greenhouse with cucumbers, how could I forget about him - I'll plant it next year.
And I also have a hyssop - or was - it got very cold this year, but I saw a twig and was already shaking over it
Loksa
ang-kay, if you have a lot, divide into two parts or put it in a glass and support a small part for 20 hours, you will know which one you like best. In any case, after drying, after a month, aroma appears. I'll go sniff - hee-hee - "my first tea" - it smells like a baked apple. At first I didn't smell at all! If I had just guessed a little bit to separate and observe
ang-kay
Oksana, Yes a little. But I'll put aside a drop. Thanks for the advice. Still, and remember the smell!
Loksa
ang-kay, in any case, do not throw it away, after a month sniff the experimental one and the one that was previously dried, believe me, the smells will be different, with a different shade.
Like my ice cream 2 times raspberries - smells different

Lyudmila, for some reason I have problems with fireweed tea, the cans are starting to grow moldy
tsetse fly, Elena, while Lyudmila is not there, I will answer for her, because I myself threw out one batch of fireweed due to mold. Immediately (so to speak, in a state of shock), there were still attempts to somehow revive and use it, but then, after discussions on the forum, I decided to throw it out and Luda put a big bullet in my doubts:

Quote: lappl1
! We'll have to throw it away! You didn't dry it out! Or the jar was wet. This also happens if we pour warm tea into jars. Therefore, you need to dry the tea for a longer time in a bag in a dry place. I am in no hurry to pour it into the jar. Dry tea has a characteristic rustling sound. Now I can tell by the sound whether tea is dry or not ... 0

Unless it appears as a strawberry
Personally, it did not appear "like a strawberry" for me. Something not intensely tea-sweetish. The color is pleasant yellow-brownish. It is rather weak for my taste, I add it to mixes.
: mad: It also broke my meat grinder
Now I twist everything by hand, or I cut it with scissors. Until I buy the part I need.

In-in, my third-rate bimatek broke after the 3rd use (a plastic gear flew). It was 9 years ago, I took it, went to the market and bought the WHOLE lot of similar gears from an amazed comrade (they were 10 rubles each, the whole lot was 10 pieces). During this time, 2 pieces have gone. How much more tea can I make?

Marina, I did not immediately recognize you with the new ava. An excellent avatar with a deep meaning! Thank you for your answer. For the second day in a row, the lights are cut down until the evening (the line is cleaned of trees), so I only go online in the evening.

For some reason I have problems with fireweed tea, the cans are starting to grow moldy.
ElenaMarina has already answered you. Yes, the tea was under-dried. Even the finished tea might not be tightly closed and dampness crept in. And where there is dampness, there is mold ...
Here's what I already answered about how to determine if the tea is dry or not:
It depends on the temperature and humidity in the house. If it is dry and warm, then it dries up in a day. It happens that I hold it for two or three days. On the street, in the breeze dries up in a day.
Tea readiness indicator - when you press on a tea leaf, you feel firmness. And the tea leaf breaks. If the tea is not completely dry, then it will feel soft when breaking. And it is difficult to break such a tea leaf - it seems to be smeared. And one more thing: if you shake the pillowcase with dried tea, you will hear a rustling dry sound. Not dried tea has almost no rustling. In addition, the aroma of dried tea is weak.
I will add that it is better to play it safe and dry the tea longer. It happens that in damp weather, tea in the house and for a week can hang in my bag.

Linadoc, Galina Iv., tsetse fly, Loksa, MariiiThank you for trying to identify the smelly. I will take a closer picture, maybe it will be seen better. In general, I simply wilted this hyssop-delphinium-snakehead-Turkish lemon balm (or whatever), then twisted it in a meat grinder and dried it in a dryer at a temperature of 30 *. It smells - very tasty. I will add it to different teas.
