Instant baguettes

Ingredients

Wheat flour 500 g
Instant yeast 4 g
Water 340 g
Salt 10 g

Cooking method

  • 1. Combine flour, salt and yeast in a bowl or mixer bowl, add water and stir with a spoon or mixer spatula until flour is completely moistened. The dough should not be smooth, it is perfectly normal if it is rough and lumpy, but there should be no dry flour left. Cover the bowl with plastic wrap and let sit for 20 minutes.
  • 2. Knead the dough by hand (10-12 minutes) or with a mixer at low speed (8-10) minutes, until the dough is smooth and firm, with well-developed gluten. Transfer dough to a greased bowl and cover with plastic wrap.
  • 3. Leave the dough to ferment at room temperature for 45 minutes. It will grow by about a quarter. Fold the dough and let it ferment until it has increased by a quarter again, 45 minutes-hour.
  • 4. Divide the dough into three sections, shape the baguettes and place them in the canvas for proofing. The baguettes will stand for 30-40 minutes and increase in volume by one and a half times.
  • 5. Cut the baguettes and bake in an oven preheated to 230 ° C (450F) for 22-25 minutes. Unroll the baguettes in the middle of the baking if necessary.

Well, albeit not entirely instantaneous, but it is almost completely impossible to make them faster. And, frankly, if you eat them right there, without delay, just letting it cool down, baguettes are good.

There the dough turns out to be regular yeast (like for bread) or watery in consistency? Should you knead in a bread maker? I really didn’t like kneading yeast dough in a food processor - it’s difficult to wash the bowl after it, but there’s no dishwasher.
