Fermented tea made from leaves of garden and wild plants (master class) (page 37)

I want to stand up for raspberries, although they have a faint smell
How did my acquaintance with fermentation start? A friend said that her sister in Finka drinks only such tea with the whole family and that they like raspberries the most. I made it too and .... amazing tea! Dark, full-bodied taste and rich aroma. I'll go for raspberries too
Girls, but I will soon be fired, 12 o'clock already, and I read everything and read what you wrote over the weekend ...
natushka
lappl1, francevna, thanks for the answer! And I wilted (left it overnight, this morning I put it wrapped in the refrigerator (not in the freezer) and left for the garden. Today I can't do it, and tomorrow there won't be time for spinning. I'll have to go through a meat grinder, which is a pity, it means such tea has I will not work
Galina Iv.
Quote: natushka
it means that such tea will not work for me
Natushka, what does SUCH tea mean? Everything will work out, come and throw it in the freezer, there will be time, you will do it.
natushka
Galina Iv., such is sheet, twisted and sliced. Galina Iv., and now dried in the freezer and then scrolled through a meat grinder - will it not be too wet? Maybe just skip without a freezer, or it's better to freeze and then make a sheet. While I am lost, there will be no more leaves from where, but I want it to turn out completely wonderful right away
Galina Iv.
natushka, I realized that you left for a few days ... is that so?
I do not like it through a meat grinder, I only do sheet. When will you arrive at home?
Galina Iv.
natushka, if you have it already withered, then of course you can immediately through a meat grinder.
natushka
Quote: Galina Iv.
I realized that you left for a few days ... is that so?
No, I just wiggle back and forth, but it takes longer to cook the leaf, and you have to find time for fermentation and drying, you cannot interrupt it. And so it will be until the end of September, you won't keep it that long. I'll make it granular.
Galina Iv.
natushka, I dash from St. Petersburg every day to the dacha from work, it's 60 km away, too much time. But I adapted. In the evening I twist it, it will ferment overnight, put it in the refrigerator in the morning to interrupt the fermentation, and dry it in the evening. Come to me - try my tea ... mmmmmmm
Or: yesterday at 16-00 I rolled rolls, immediately cut and under the press, and in the evening at 11 o'clock dried. The result is a medium fermented tea, closer to a strong fermentation.

natushka, through a meat grinder the tea turns out very good. So don't worry!

They won't be fired! You treat them with tea ...
Quote: Galina Iv.
do you have to dry up first ?? Oh my God! and I always threw them in the freezer right away ...
The withered is always better at it. Even if you send it to the freezer. I noticed it. But leaf can be done without drying. Well I only do granular. So you're all right ...
natushka
Galina Iv., lappl1Thanks for your advice and support! Another question - when I take out the leaves from the refrigerator (they were previously withered, wrapped in a towel and placed in the refrigerator for lack of time), brown spots of various configurations appear on some leaves, should these leaves be thrown away? I have thrown it away so far, but when there are few of them, it's a pity.
Galina Iv., thank you for the invitation, you'd better come to me, the long roads are a bit heavy for me with age.

natushka, no, don't throw it away. These leaves have already begun to ferment. And not in the refrigerator, but earlier, in the fabric. This is achieved by preparing tea in this way.
Loksa
Why throw everything into tea (which leaves have darkened? Perhaps these are traces of fermentation-color change.)
do not throw anything into the business ... ..
Galina -: rose: hello! I was not able to enter my son at work, Z / P is: mad: well, but the work was thrown
At the dacha now - a thrill. The heat subsided and the temperature was lower during the day. Under the apple tree tea-UUUffff-Karasho!
By the way, the rain I still "washed" the leaves for the weekend, caring ... Controls the presence of microbes in my body.
Lyudmila, my tea has been protruding for 5 days in a pillowcase - I'm afraid to close the unfinished one (it's damp and skoznyak in the apartment).
Do you think I won't dry it out? It doesn't dry, but is it ventilated? A?

Do you think I won't dry it out? It doesn't dry, but is it ventilated? A?
No, Oksan, you won't dry out. It must be well dried, otherwise it will become moldy. I also have it hanging for a week. Now the rains have passed, the humidity is high, so there is a risk of not drying it out. Yesterday we talked about this with Mistletoe on the topic of Ivan tea. Look, I gave a couple of tips on how to quickly finish drying tea:
Quote: lappl1
Pour tea on baking sheets, heat the oven to 50 *, turn it off and keep the tea there with the door slightly open. You can turn the oven on and off several times. This will not dry out the tea, but it will dry for sure. I did this a couple of times last year when I doubted that my tea was dry. And it is best to put the tea directly in the bag in the dryer, turn it on for 30 * and hold it for a few minutes. Turn off the dryer, let the bag cool down and the tea in it. Check tea. Turn it on again if necessary. I did that too last year, because it was a really bad summer - it was damp and I didn't want to rustle the tea.

Yesterday I made strawberry loose tea. In the morning I took out the bags from the freezer, wanted to cut them for lunch, spun and remembered only late at night. I opened the packages, and there was such a pleasant fruity aroma, I cut them and sent them directly to Isidri at 65 degrees. When brewing, the tea turned out to be dark and rich, I added cherries, blackthorn, apricot, jida + strawberries to the mixture. It turned out very tasty.
lappl1
Alla, which means that you have tested the "sweating" method, and more than once. Cool! Girls who have little time to make tea, take on arms.
And I ruined my tea so much. It was necessary to twist the packages in a meat grinder after the packages, and send them to dry, and I also began to ferment it. As much as 24 hours. Yes, with such heat! In general, the tea turned out to be black, but almost tasteless.

Girls, I report, as promised, about the felt cherry.
I collected the leaves in the morning (after a night rain), dried it as best I could, and left it to dry for a day. In the morning I was going to twist the rolls, but the leaves did not wilted - the vein crunches, and the rolls in my hands are crumbling into dust. Then I put the bag of leaves in the freezer for another day (even more - until lunch the next day). She pulled it out, thawed it, and they were "like living" ... that is, the rolls seemed to curl, but not juicy at all. In general, I twisted it, cut it, sprinkled it with some water, crushed it, covered it with a damp towel, a lid and left it to ferment (only the heat was 28-29 degrees).I smelled every hour, but for some reason there was almost no smell, it didn't even smell of grass ... As a result, after 6 hours of fermentation I decided to dry it (I didn't dare to leave it overnight). There is no oven at hand, I had to experiment in a frying pan. It was drying normally, stirring often, BUT there was practically no smell - slightly herbal.
Of course, I got upset - I was hoping that at least during the drying process there would be a scent ...
Poured into a bag to dry.
A day later, the aroma appeared! Not strong, but pleasant - I don't know how to describe it - not floral, not sweet, not stone-fruit, just smells like SUMMER)))
I brewed it - it looks like I got green tea (both in color and in taste) - very refreshing in the heat!
Takeaway: how refreshing mono tea is, but not impressive. Added to Village (fireweed + bird cherry + mountain ash + raspberry + strawberry) - a new note has appeared!))) Delicious!

P.S. And if you add "Cherry Honey" to such a mix, it will be even tastier! (I still made this honey syrup! :-))
Galina Iv.

Galina Iv., there is a question for you. Since the granulated crumbles in the pan, I want to make a larger sheet.
After the freezer, some of the leaves of the apple tree turned brown, but the bulk remained green. What to do with browns?
And yet - twisting Ivan tea after the freezer is very convenient, a lot of juice and easy. Apple and blackberry leaves: I will walk over them with a rolling pin, but it seems to me that they will not be twisted anyway - they remain so hard .. How do you twist ??
Galina Iv.
Expensive Mary Poppins, the leaves in the freezer darkened because the juice in them froze from the low temperature, there was no fermentation), so do not part with the brown ones, but send everything together together for fermentation!
I always twist the leaves of the apple tree and black chokeberry with Ivan-tea, first Ivan-tea, on them black-chops, an apple tree, on top again, Ivan-tea. Thus, the juice from Ivan tea gives juice to other components.
I did not do it separately, the girls always write that the apple tree and the black chokeberry, if you make mono-teas, it is better through a meat grinder.

I am reporting, as promised, about the felt cherry.
LingaThank you very much for your experience with the felt cherry. Yes, there are such plants with surprises. Maybe a longer withering would help. But maybe nothing would have helped - it's just the sheet's features. Now let's calm down on her account. I had the same experience with blueberries. There is a lot of work, but no result.

Lena, IvaNova I advised you correctly. if that doesn't work, try sweating the tea. There are links to this method on the first page of the recipe in the Notes.

Thank you so much,Galina Iv.!
Ivan tea at home has already ended, I tried it according to the principle of how the author of the topic Lyudmila did the leaves. I cut the leaves, sprinkled them with water and put them to fermentation.
I'll twist the rest in a meat grinder then. If I find more fireweed, I'll try it according to your method.

Galina Iv., to Kazan
Galina Iv.
I've never done a lot of jambs, and overwrought it, and twisted it not frozen (not previously dried), because I put too much cellophane. the bag is in the freezer and it is not frozen in the middle, so throw your slippers on me - and I'll say that all the tea is good !!! each with its own wonderful taste!

Today I rolled the grape leaves (dried for 12 hours. Lay in a towel in the refrigerator for 1.5 days), fermented for 4 hours (temperature 25-26 degrees), dried in the oven for 1 hour, now it is drying in a dryer, first 50-60 degrees, then about 30 degrees. I did not smell any smell, except for the herbal one, when I twisted it through a meat grinder, maybe a nose like that. Also (also through a meat grinder) -apple tree, pear, 1/2 thorn-dried 12 hours and raspberries from the freezer, also about 1/2. Stirred and fermented for 4 hours too, it seemed the smell became strong (as far as I don't know, but I didn't keep it any longer) dry. At first there was a slightly cherry aroma in the room, I don't feel others, now it has decreased, I think it should work out. Interested and my friend, sitting in a cast with a broken leg, I'll go, with previously prepared teas, let him taste
Galina Iv.
natushka, I do not ferment anything for 4 hours, 8-20 hours

I'm not happy with the Kuril, maybe it will show up later ... my terrace is entwined with grapes, probably the name of hop, no one tried it? About his twisting ivan tea in the freezer will not work yet, the neighbor brought the child a bucket of fish, in packages and ice cream. I'll try to sweat. we have 9 degrees and rain.

Galina Iv., Well, it really smells like SUMMER))) I couldn't find any other words to describe the fragrance!)
My felt cherry tea is hanging to dry - I go and smell it, and I think it's not in vain that I made it - it will go sooo well in winter! (And yet I must insist, get stronger ...)
Linga
Lyudmila, yes, I had to tinker with the felt cherry. Well, I somehow expected, apparently, something more from her ... Or maybe the temperature during fermentation was too high, maybe there are other reasons (for a bad dancer ...)))) Although I don't regret what I did this tea - sometimes I really want a good green tea - so I will have it in stock - I think it will not be lost!
And for the future (next summer), I think that I will ALWAYS make Ivan-tea and cherries (ordinary) in large quantities, and everything else - so, "play around", experiment - a little bit.
Elena Kadiewa
Ladies, I have an ordinary bird cherry and some kind of Virginia growing on my site, this year it bloomed and some kind of berries appeared a meter tall, can you make gulls from it too?

Linga, gold words ! Still do not discount the blackberry. Only it does not need to be fermented for very long - 5 - 6 hours. And the Village is good in any combination!
Quote: Linga

Of course it will not be lost! In winter, everything will be useful. And I think that the tea will still be infused. By the way, I really like green willow tea - 3-4 hours of fermentation.

Lena, we did it from ordinary bird cherry. It smelled very good at all stages, but in the end - not a strong tea - in color and aroma. Although, the girls say that after aging, the smell of cherry flowers began to appear. I haven't tried it yet - I did it and removed it.

I stole a recipe at the mistletoe's gatherings, albeit with improvisation, yummy ...

Lyudmila, I didn't find blackberries in familiar surroundings, but so, I remember about her - you described it deliciously))) (in general, we recently bought a plot, now we are slowly equipping it - I dreamed about the blackberry even when I did not know anything about TEA - I love it since childhood These astringent berries. Someday I will plant this aronia delicacy for myself and "come off" in full!)
And experiments with Ivan-tea are now postponed until next season - wow, I'll start making tea right from spring !!!

From the end of May, you can already tear fireweed - not yet blooming. The most delicious tea is obtained from young leaves. And I still find Ivan tea with not bad leaves. True, it crumbles a little in a meat grinder. But it still smells good.

You can ask a neighbor to dig in a branch. We do this with currants, gooseberries when we want to propagate a plant. The buried shoot is rooted, chopped off and transferred to a new place.
It's so hot here now, I can't dry it, I stuffed the freezer with leaves.

Lyuda, girls! I got to Moscow (tomorrow for work), I immediately report about amaranth tea: beautiful, pleasant, but nothing. Probably, you can use other mixes for benefit and beauty, since there is neither taste nor aroma: Fermented tea made from leaves of garden and wild plants (master class).
Drying herbs (not making tea). I don't want to offend anyone, especially Veronichka, but 20 years ago I made a conclusion for myself that phytotherapy is drugs with a very approximate dosage that can only temporarily reduce the manifestation of a symptom (and not cure it!). Since then, I have prescribed it as an additional remedy for temporary relief. This is my personal point of view, which I do not impose on anyone.

I do not argue. On the contrary, I agree with you. It's just that in my situation, going to the doctors is practically impossible. Therefore, herbal medicine for me is the only remedy.

Girls! I found another option for storing tea. Containers have worn out almost everything. I haven't bought any new ones yet. But these bags are well suited for storing our tea. They sell cereals and sugar. They are airtight. Stapled the top of the bag with a stapler.

We usually do this in early spring, in order to transfer it to a new place in the fall. I think that it is possible to do this even now, only will it have time to take root in such a dry land before autumn? Now, if you water it with heteroauxin, it may work out. The branch that you will dig in must be pinched.

Valentine, Thank you so much ! I understood everything! Perhaps, in the spring I will do it, because after all, I will not do it at my place, but at my neighbor's.
