Maybe you have jerks because of a too thick uneven piece of dough at first? and then when it levels off and the thickness decreases, everything becomes normal? try starting with a thinner piece and see what happens. When I take a piece that is too thick, I can't even always insert it between the rollers and I have to flatten it more so that it becomes thinner and fits into the rollers.
