The first time, probably little meat with minced meat was kneaded - it turned out a little loose, but did not fall apart, the second time I sat for 20 minutes with a fork + with nitrite salt - it came out monolithic and not at all dry.

I would like to advise on cooking - in general, the ham turns out well, but there is a suspicion that our meat temperature does not reach 70-72 degrees (although everything tastes very good, and it does not seem that something is not fully cooked) ...
We cook in a Redmond - RMC M60 cartoon for an average of 5 hours, there is a multi-cook, but the choice of temperatures of 70-100-130-160 degrees is small.
Usually we set the minutes at 45 - 100 degrees, and then for 4 hours at 70.
But I suspect that these 70 are not 70 at all, but maybe 65 at most - accordingly, the meat in the ham maker will be less than 70 degrees, no matter how much you cook.
I ask from the point of view of the safety of the further use of ham - maybe you cannot determine the taste, but in fact it is not quite ready (and the stomach and intestines may let you know about this later).

Maybe try to do on heating or heating? I read that such modes just up to 75-80 degrees heat up the content of the multi .. But unfortunately I don't know for sure.
