Flour - 1 cup (237 ml)
Sugar - 1 1/2 teaspoons
Baking powder - 1/2 teaspoon
Salt - 1/4 teaspoon
Eggs, divided into whites and yolks - 2 large
Milk - 1 cup
Butter, melted and slightly chilled - 2 tablespoons (I add unscented sunflower)

- In a large bowl, combine flour, sugar, baking powder and salt.
- In a separate small bowl, combine the yolks, milk and melted butter.
- Add the yolk mixture to the flour mixture and stir with a wooden spoon until the mixture is well blended, but still lumps (I beat with a mixer).
- In another clean bowl, beat the whites until they are firm but not dry peaks, being careful not to beat them!
- Add a third of the whipped proteins to the dough and stir to make the dough lighter.
- Add the rest of the proteins and knead very carefully, being careful not to knock the air out of the proteins.
- Use the dough immediately.

Pour 3/4 into the pan.

The next day, I tried it without cocoa, replaced the amount with flour, it turned out white balls, or rather light brown. I put pieces of chocolate inside. But at first the dough was slightly liquid and the balls were a little uneven, and when I added flour, it immediately turned out as it should.

By the way, in my recipe it was like this: Mix flour, sugar, cocoa, soda, baking powder and salt in a bowl. Then add liquid products other than coffee and stir. Then add hot coffee and stir again. I didn’t beat anything much.
