While waiting for dry starter cultures, I tried to make yogurt using a finished product without additives. Sterilized cups, boiled and cooled to 36 grams. milk (regular), added sourdough and sent the entire batch to the machine.
The yoghurt took 5 hours to cook and tasted good. But I was confused by the consistency - small grains, especially from the bottom, with a small amount of whey. The glasses are hot underneath. Not warm, but hot, like the bottom itself. I put an ordinary thermometer on the bottom - the temperature is over 50. The temperature should be that high?
I tried it with other milk and sourdough, the result is the same - a slightly curdled product, not overcooked, but, it seems to me, overheated from below. Or should it be?

Please share your experience!

Hello, Aksilime... Congratulations on your purchase! The yogurt maker is super !!!

Since you cooked from a finished product, the fermentation time is reduced in comparison with dry starters. Curdiness and the presence of serum are clearly overexposed. Yes, 5 hours is a lot, 3-3.5 hours would be enough.

In general, cook better with dry starter cultures, do not experiment with purchased finished products.

More. Measure the temperature inside the glass, at the bottom it should be higher, this is not an indicator.

8 hours - just for a dry sourdough product. The manufacturer is competent in this matter. But if you really want to .... do it under control, check after 3 hours, if it is not thick enough, then leave it to cook for another half hour. And remember: ALL additives are added to the FINAL product.
What else? The recommended temperature for yogurt is 36-42 degrees, according to my measurements in this yogurt maker inside the glass, that is, the temperature of the yogurt itself is 39-40 grams. How should it feel? Hot of course

I'll try to cook it again tomorrow and get it out early.

Good day! Chances are you've overexposed the yogurt. You write that you cooled the milk to 36C - this is a very high temperature for a long cooking time, 5-6 hours. For this time, yogurt is put if the milk is from the refrigerator, or has room temperature. In your case, the yogurt may have stagnated due to the high temperature of the milk. You can also do this, but you need to set the time for 3 - 3.5 hours. As for the measured temperature at the bottom (above 50C), we did not have anything like this during the tests. The fact is that the yoghurt maker is gaining temperature smoothly, and not immediately 40C. Did you measure the temperature after 5 hours of cooking?

No, I decided to see how the contents of the cups felt after about 3-3.5 hours, at the same time I measured the temperature at the bottom, because the "test" cup was very hot at the bottom. The cups were placed directly in the yogurt maker (without a bowl).
I will try to cook as advised by you and Aygul by the fasting above, and along the way measure the temperature. Thanks for the recommendations!

Aksilime , we put cups / jars in the bowl that comes with the yogurt maker.

I measured the temperature with and without a bowl. There is no difference (the only thing is that it heats up a little slower, but not critical). This can be seen in my tests. I only use the bowl for ease of maintenance.

the delivery was PEK in a rigid package. (For my part, I took care of the integrity by ordering ZhU). 2 transparent covers are broken - one has a crack, the other part has broken off, but there are no fragments in the box. 1 plastic white lid split. and almost all cups are flawed - large and small chips, some with cracks, on many such small chips, "burrs", which does not allow them to be used for their intended purpose.
During the check - visual and tactile - I ran my finger along the rim, and even made 3 scratches to the bottom of the jars. This should NOT be used!

Please tell me what to do about it. 4 good families were left without Your your yogurt makers for the holiday! And I so praised ...

I am ready to send you all of them for checking / replacement!

PS. The yoghurt makers were packed in a branded box with Brand trademarks. There are 4 of them. fit

If the cups are damaged during transportation or household use, this is not a warranty case. In this case, new cups can be ordered.
