Firstly, you can bake 4 pies and not use the oven with the water. In the oven, I would definitely pile a whole baking sheet. And I'm losing weight. And then a pie for me, a pie for my husband (he is not losing weight, but he also needs it) and a couple of my daughter, a growing organism. A special unit for losing weight, we can say. Secondly, very aesthetically pleasing pies.Recently I handed over a gift to a friend of a basket with cherries - she was just in disarray. And my daughter did not understand at first what I had cooked, I thought berry baskets from the pastry shop.
Well, I'll tell you about my experiences. So far, two of the most successful, which I will repeat.
The first is 5-spoon muffins. Let me remind you: 5 tablespoons of sugar, milk powder, flour and 3 eggs + baking powder and some kind of flavoring (vanilla, vanillin, zest, etc.). I replace the last spoonful of flour with ground flaxseed. Once, instead of flax, I put roasted peanuts finely ground in a blender - that's not bad either. Only I put sugar spoons without a slide, and flour, on the contrary, with a slide, and therefore my dough is too thick. I dilute by eye, splashing water, so that there is a muffin consistency, like medium-thick sour cream. In each cell I put a couple of spoons of dough, a couple of frozen large cherries (without defrosting) or a teaspoon of apricot dried apricot puree. I cover the berries with half a spoonful of dough somewhere else. I bake standard 10 min. I have time for my daughter to make cupcakes for breakfast before school.
Baskets, I experimented with different dough, the most unblemished and not too high-calorie so far for me is:
Use spoons to measure equally homemade mayonnaise and homemade yogurt. The last time I did 8 spoons of both. 3 tablespoons without a slide of sugar (this is for sweet baskets, for salty and half a spoon is enough), salt, a teaspoon of soda without a slide (I just throw in a generous pinch, at the same time I rub lumps of soda, if any). You don't need acid, it is in yogurt and mayonnaise. I would like to write for the beauty of the recipe how many spoons of flour, but lost count. But in any case, I am more guided by the consistency of the dough. It should be soft but not sticky. Too soft will be difficult to roll out, and a lot of flour will hammer the dough and make it hard. If the dough is still a little sticky, dust it with flour a little while rolling, rather than add flour. I dilute the flour with starch (a spoon in a glass of flour). I divide the dough into 6 koloboks and roll each into a long oval. Koloboks are about the size of a medium-large tangerine. The size of the oval is such that both cuttings fit back to back. Thickness is about 2-3 mm. First, I rolled a large layer and then cut it out. But small ovals are easier. I ride on a silicone mat. It is advisable to roll immediately before baking. I don’t know about you, but my dough, if it’s already cut out for a long time, shrinks. If this happens, just spread it a little with your hands on the rug right before the formation of the pies. I put the first batch in a cold cupcake. I bake for 10 minutes. This amount of dough was enough for 2 bookmarks (6 muffins from the original koloboks and 2 from scraps). The filling was made sweet from frozen berries (from cherries and from raspberries). She did not defrost the berries, mixed about 2 cups of berries with a couple of tablespoons of starch. Sugar was already poured onto the berries in the muffin, a teaspoon into the cell.
And she made salty pies. Chicken fillet minced in half with cabbage, onion, seasonings, salt, interrupt in a blender. Lay the filling (both sweet and salty) with a slide, then the top is well browned.
Sometimes mayonnaise hangs in the fridge (only my husband eats), here's a good way not to let the product go to waste - put it on the dough. Well, or make fresh for the dough in a minute with an immersion blender. Yogurt is never translated. But butter-margarine is not often with us. Therefore, this recipe is more practical for me.

I didn't like the baking somehow from the purchased yeast dough: the dough was tough, it was not tasty, I felt sorry for the tasty filling, the baked goods were thrown away. I also made sour cream-mayonnaise (6 tablespoons of mayonnaise + 2 tablespoons of sour cream +1 egg + baking powder + 6 tablespoons of flour) I liked it very much, and the pastries are soft and tasty the next day. The filling was added directly to the dough by mixing thoroughly. (Ham + cheese + egg + green onions). Delicious muffins-pies.
