Am I confusing you too much? Perhaps the bread rises faster, because it is heated during the proofing ?, then the last proofing is definitely unnecessary. Tomorrow I'll bake French again, but with half the norm of yeast, without interrupting the program. I endure this recipe to the end. The manual mode is just a fairy tale. The main one also really liked it and did not cause any complaints on my part.
