Ingredients

Fermented dough 45 grams
flour for porch 1 grade 50 grams
porch water 34 grams
fresh yeast for porch 1.5 grams
pretend salt 1 gram
Dough
wheat flour 1 grade *** 84 grams + 10
whole grain wheat flour *** 84 grams +10
wallpaper rye flour *** 84 grams +10
porch 45 grams
fresh yeast 8.3 grams
Fine sea salt 7 grams
flax seeds 45 grams
cold water*** 209 grams -9

Cooking method

  • Fermented dough (pretend)
  • Dissolve yeast in water, add salt and flour. Knead until smooth. Leave for 1-2 hours at room temperature and then refrigerate for 24-48 hours.
  • Dough.
  • Knead all ingredients except salt and seeds with a hook for 8 minutes, add salt and knead for another 8 minutes. Add flax seeds, previously fried in a dry skillet and cooled. Knead into dough until evenly distributed.
  • Fermentation at room temperature for 90 minutes. Knead the dough, roll into a ball and leave to rest for 10-15 minutes. Form a loaf and place seam side up in the basket. The bread is proposed to be made without cuts.
  • Baking on a stone at a temperature of 230 degrees. First 15 minutes with steam. Remove steam, ventilate the oven, lower the temperature to 180-190 degrees and bring the bread to readiness. My total baking time was 35 minutes.

The recipe differs from the original in that I halved it. Instead of seeded rye, I have wallpaper. This is allowed by the author. As long as I try to bake bread according to Sergey's recipes, the amount of flour always differs from him. I always have to add flour. Here we have it so different! Today I decided, using Vasilisa's advice, to reduce the amount of water. Reduced by 9 grams. But that didn't help me either. I also had to add 10 grams of all kinds of flour. A total of 30 grams.
The bread is delicious! Crispy crust and some nutty taste! I will definitely bake this bread more than once. Thanks to Sergey for his wonderful recipes and master classes.
