So let's add ginger too! For the second year I have been reading about this cupcake and decided to do it this year too. For the filling I bought two types of raisins, dried apricots, prunes, ginger and two more types of unidentified dried fruits (they were sold to me as cranberries and cherries, but I'm not sure)

The cupcake is amazing! You will not regret!

Girls, hello!

I come out of the underground. For 2 years in a row, I have been secretly reading the topic from cover to cover, and then I soak-knead-bake-wrap these cupcakes.
It turns out to be exploratory. The first time I did, what I managed to give, I gave it, and then my husband tried it and did not allow anyone to give it away.
Now I try to do more.

It's time to go out to good people.
This year I will bake a cupcake again, together with you. True, I'm a little late, I just laid the filling to soak yesterday. And she mowed in the night: she forgot to add spices and citrus juice, she only poured cognac. I’m sitting at work and I’m nervous - I’d rather go home and improve.
I make the author's filling to taste. This year - cherries, kumquats, raisins, mangoes, pineapple, cashews and walnuts. I haven't decided about spices yet, I'll look at my mood and what is available at home.

In general, take to the company

We started selling dried limes, tangerines and lemons. They look bright and beautiful. I want to buy for a cupcake, so that the filling is brighter. Tell me who used these. Are they edible?
Era
Luda, I can't say what you saw on sale. But most likely it is a kumquat (in our country it grows in Georgia), just because of different dyes they are passed off as lemons, tangerines, kiwi, etc. But in fact, this is one fruit. I did not like.
Try, take 100 grams, kiwi is best, if available. You will understand everything yourself.
Inusya
Likewise, I am even poured out of trying them. It is crammed with incomprehensible flavors and dyes, it is not known how safe they are. Personally, I try to avoid this as much as possible. Quite a lot of natural besides them.
Husky
Girls, thanks for the clarification. And then tell me what is multi-colored everyone insists in jars. Everything is so bright and beautiful.

For example, Luysia.

Era
In appearance, raisins, prunes, dried apricots and candied fruits. Maybe Luysia and the girls will tell you.
I was also impressed by this recipe.

Lyuda, I forgot to write if you saw on sale not pieces, but whole fruits, then this is definitely a kumquat.
In kiwi (supposedly in kiwi), even black seeds were not observed.

I bought these too. We have dyed pineapples. Girls, I do not quite understand to immediately pour spices into dried fruits or then into the dough? I also poured 80 ml of brandy and the juice of half an orange. Enough?
Husky
Well, as far as I understood from the recipe, only spices do not go to filling No. 2, but go into the dough. In all other fillings, the spice mixture goes into the fruit mixture. And as far as my memory serves me, last year I added spices to the fruit mixture. I'll go and smell it and tell you.
Yes exactly. Last year added to fruit-nut mix.

I poured 150g of brandy and juice of a whole orange + juice of a whole lemon. Everything is absorbed.

Clear. Thank you. tomorrow means I will add everything missing and let it insist. One more question. after standing the cake and smearing it with alcohol - can children eat it? Or do it separately for them?

I cooked this delight! everyone was delighted, including me. the recipe is very convenient because it can be prepared for future use. I prepared a cupcake according to this recipe:

Dried fruits (0.5 kg.), Infused in alkagol (100 ml.)
Butter - 200 gr.
Eggs - 4 pcs.
Sugar - 150 gr.
Honey - 2 tbsp. l.
Flour - 250 gr. + 2 tbsp. l. for dried fruits
Cinnamon - 1 tsp
Ground cloves - 1 tsp
Ground ginger - 0.5 tsp
Ground nutmeg - 0.5 tsp
Baking powder - 1 tsp.
Almonds - 150 gr.

In advance: rinse well, dry dried fruits, put in a jar, pour in aromatic wine, leave in a dark place for 3-7 days. I took a set of dried fruits the same as for the previous cake (dark and light raisins, dried cherries, candied fruits (lemon, lime)). Shake the jar from time to time.
1. Peel the almonds. Fill with boiling water, leave for 10 minutes. We drain the water, pour it cold. We drain the water, fill it with boiling water again. Skin is removed easily, you just have to put a little pressure on the nut with your fingers. Dry for a few minutes in the oven.
2.50 gr. grind almonds into flour using a blender.
3. Sift flour, baking powder, spices into a bowl.
4. Separately beat the butter and sugar.
5. Add honey to butter with sugar, beat well again.
6. Add eggs one at a time, beating well each time.
7. Add flour and almonds. Mix well.
8. Mix dried fruits with flour, add to the dough, mix.
9. Grease the mold with oil.
10. Transfer the mixture to the mold. Make a small indentation towards the center, as the cake rises well.
11. Arrange the top with almonds.
12. Bake for 1.5 hours at 150 degrees.

The aroma begins to spread throughout the apartment even at the stage of preparing the spices and lasts more than a day. Returning from work the next day, it felt like in childhood, when you return from school, and my mother baked all kinds of goodies and the smell from them excites even the neighbors)
The cupcake should be allowed to brew for a month.
The cupcake is soft, loose and insanely fragrant.

The recipe is taken here.

It seems to me that you have to decide this yourself after trying the cake. If the oven is separate for children, then this should be done before the holiday, and not 1.5 months before, because without alcohol the cake will deteriorate and quickly become stale.

Girls, and I am with you. Yesterday I soaked dried fruits.
Raisins, dried apricots, prunes, cherries, cranberries, candied fruits (colored pineapples) - everything is delicious,
figs - I started cutting, I added gr. 100, I tried, the bones are small and a lot, I didn't like it, I wonder how they will be felt in baking?
kumquat - I didn't like it at all, then I read that not only me, but gr. put up to 100,
pamelo - green and hard plates, barely cut, to taste like niche, I think they will become softer in cognac,
ginger - very goodI liked how the gingerbread in sugar is very ginger, put 150g, but now I doubt if it’s a lot, or will it lose its sharpness after baking?
I immediately added spices - allspice, nutmeg and cinnamon. Then cognac and lemon (juice + zest).
Look like that's it. We wait.

And I soaked it all 16 in the evening

On Sunday I sat down to chop pineapples, prunes, melon, then chopped a nut; almonds and walnuts As a result, I prepared everything and poured it with rum, and what to expect once everything is ready And today I went to Auchan and bought 82% butter for a cupcake, everything is prepared. It remains only to shake the cans and enjoy the aroma
Quitka
I also soaked dried fruits (raisins (3 types) cherries, cranberries, ginger, pineapple, kumquat) and almonds. I added orange juice, lemon juice and zest, cognac and seasoning in Kamis baked goods. The aroma is indescribable. I'm really bastard when I open the can!

The pomelo will definitely soften, the ginger will lose its sharpness. Last year I used them in the filling, this year again ... I sit - chick the filling
kava
And I "soaked" the filling. This year I decided to put spices in the dough. I didn’t take dates - they would go badly and then “stain” the dough. But I put more cherries and dogwood (well, dried apricots and 2 types of raisins by itself), all kinds of nuts, but the kumquat didn't go to me ... I tried it and decided not to put it. Beauty!

And I haven't done it yet, such a hard week. That year I soaked dried fruits, but without pepper, nutmeg and cloves. Do they give a strong smell?
kava
Strong, but the cupcake itself should be spicy. I put it in the filling for 2 years, and this year I decided to put spices directly into the dough.

Hello, and I am with everyone (from the bushes). The oven will be the second time. Thank you very much to the author of the recipe for the pleasure. Directly some kind of childish joy from the whole process and the anticipation of a holiday in the middle of a gloomy damp autumn ... It's about emotions. Can you ask a question now? You need to bake the cake on a stack of newspapers. They smelled very strongly for me. like a fire. I had to remove it and the cake was burnt of course. I read the whole Temka, but it seems that no one had such a problem. I don’t know how, but I don’t want to cut the cake again, it’s a pity.

Newspapers really smell at the beginning of baking, but then the smell disappears. This time, instead of newspapers, I will put corrugated cardboard, it doesn’t smell so much, but the result is excellent

I didn't bake on newspapers, I was afraid of the font, I just took 2 baking trays and 2 silicone mats and it turned out great, it didn't burn, but somewhere in Temko Liss wrote that you can pour water into a deep baking sheet, and bake a second baking sheet on top.

Hello, I've been waiting all year too. to bake this delicious Christmas cake. I celebrated their Christmas last year in England and tasted several options prepared by different ladies, as well as ready-made. They start cooking and baking at the beginning of November and are stored in hermetically sealed cans. I still remember that stunning aroma when I stuck my nose into such a jar of cupcake! After that I dug up different recipes from their sources, printed them out, studied them, and then waited ... but baked according to our recipe, from the Bread Maker. There is almost no difference, only in those recipes the fruits are soaked the day before, I chose the middle option. three days. I baked the first on November 2nd, I need a cupcake for the New Year. I'm waiting for an Englishman's guest, and baked the second on the 16th, I will distribute. Now the process of the weekly "drinking" is underway.
I baked on newspapers and wrapped the molds also with a thick layer of newspaper, on a very low heat for three and a half hours, the newspapers did not burn, maybe because I additionally set a baking sheet under the cake.
