Girls, an urgent question. Answer who knows, plz. If baked with a thermometer until tender, then what is the temperature? inside this cupcake?

A.lenka, I am not a very experienced pastry chef, I have baked this cupcake only the second time.
After 2.5 hours from the start of baking, the cake showed all signs of readiness - a beautiful color, moved away from the walls, a dry stick. The crumb temperature was 100 degrees.
Once I measured the temperature when baking other keskas - the readiness was, as for bread - 96-98 degrees.
Probably late to answer, baked?

This time it turned out to be more juicy. The crumb is dark again. I added pine nuts (for the first time I only made dried fruits), they fit very well, they are soft. I added some dried apples - very good, the apples are sour, the cake turned out to be not cloying, with a noticeable sourness.
