Carrot-nut muffins

Ingredients

dough:
100 g of carrots, grated on a fine grater
100 grams of walnuts (almonds)
300 gr flour + 2 tsp. baking powder
150 g brown sugar
1 teaspoon ground ginger
150 ml vegetable oil
200 gr sour cream
2 eggs
20 ml lemon juice (I poured in lemon liqueur)
glaze:
120 g icing sugar
2 tablespoons lemon juice (I poured lemon liqueur)
nuts for sprinkling

Cooking method

  • Mix flour with baking powder, add ground or finely chopped nuts (I had both; I lightly fried the chopped nuts in a dry frying pan). Add the rest of the ingredients and knead the dough. Put the dough in 12 prepared tins and bake in an oven preheated to T 180 ° (convection 160 °) for about 25 minutes.

  • Leave the muffins in the tins for 10 minutes, then remove, cover with icing and sprinkle with nuts.
