Pancakes with meat

Ingredients

DOUGH:
Eggs 2 pcs.
Yolk 2 pcs.
Butter (softened) 2 tbsp. l.
Milk 360 g
Flour 160 g
Cognac, brandy 1 tbsp. l.
salt 1/2 tsp
Butter for frying (ghee), vegetable oil
FILLING:
Minced meat (any) 400 g
Onion ½ pcs. - 35 g
Garlic 1 tooth
A tomato 1 PC. - 120 g
Salt pepper
Vegetable oil for frying
TOMATO SAUCE:
Tomatoes (fresh or canned in their own juice) 250 g
Vegetable oil 1-2 tbsp. l.
Garlic 1 tooth
sugar 1 pinch
salt pepper
cheese

Cooking method

  • Prepare the filling.
  • Fry chopped onion and minced meat in a small amount of oil. Add garlic squeezed in a garlic press and finely chopped tomatoes, peeled and seeds. Season with salt, pepper and simmer until the liquid evaporates.

  • Prepare pancakes.
  • Beat all the ingredients in a food processor (or mixer). Put the dough in the refrigerator for 30 minutes.
  • Preheat a frying pan, brush it with melted butter.
  • Pour the dough into the middle of the pan, turning in a circle. To spread the dough over the entire surface of the pan.
  • Fry on both sides until browned.

  • Prepare the sauce.
  • Fry chopped garlic in oil, add chopped tomatoes without skin and seeds. Season with salt and pepper, season with a pinch of sugar. Put out until slightly thickened.

  • Place the filling on the pancake and wrap. Place the pancakes in a baking dish. Drizzle with tomato sauce, sprinkle with cheese. Bake until the cheese melts at 180 gr.

Note

Sometimes I bake pancakes like this with white sauce - bechamel. Delicious anyway!

say shook. your dough recipe includes plums. oil 2 tbsp. l. - exactly in the dough? or is it for frying? or for frying sl. oil separately? And do you cook minced meat in a fine meat grinder or medium or what? and from what meat or no difference?
Can someone tell me how to get rid of my problem - lately I've got some kind of strange mince when I fry it - it is taken in lumps (that is, not crumbly, but is collected in small lumps) I really don't like it.

Svetlana2010 , 2 tbsp. l. butter in the dough and + for frying. I already buy minced meat. It's not through the fine mesh, that's for sure. And if I take the meat, then in the combine with knives I turn it into minced meat.
I (and probably everyone) sticks together in lumps when frying, if it is not interfered with and not kneaded with anything. I fry and knead with a fork. It doesn't get stuck.
