Ingredients

Thick buckwheat sourdough 500 g
Wheat flour 400 g
Salt 8 g
Rast. oil (I added sesame) 1 tbsp. l.
Honey (dissolved in water) 1 tbsp. l.
Warm water 100 ml

Cooking method

  • She baked in the oven in a cast-iron skillet with a lid for 10 minutes at T 240 * C, then with a decreasing T 180 * C - 40 minutes, then removed the lid and baked for another 15 minutes to brown the top.
  • The bread is tasty, aromatic, fluffy crumb, does not stick together when squeezed, but takes its original shape.

Here is another recipe for sourdough buckwheat bread, no less tasty.

BUCKWHEAT.

-350 gr wheat
-50 gr buckwheat
-200 g of buckwheat sourdough (I fed 50 g of sourdough with buckwheat flour)
-20 gr honey
-220 ml warm milk (dissolved honey in it)

Kneading and 1 hour of rest.
Then add salt and oil and knead a second time
-10 gr salt
-2 - 3 grams of grape seed oil

This is how the bread was molded. The dough was divided into two parts, each was molded into a bundle (as baguettes are folded), then the bundles were intertwined and into a shape for proofing. She let it sit in the oven with a mug of boiling water.
Baked for about 55 minutes at T 180 * C.

-kefir + water 200 ml
-400 gr flour (35 buckwheat, remaining wheat)
-2 g dark malt
-5 gr rye bran
-200 gr. wheat sourdough (100% hydration, 1: 1)
-2 tsp salt
I mixed the yeast with molasses, added a little liquid from the total amount, and a little flour from the total amount, I leave it until the "cap" is formed, at this time I measure out the rest of the products. Then I knead the dough, let it come up for about 40 minutes, knead it a second time with salt, shape the bread by folding and into a mold greased with non-stick grease.
For proofing in the oven with a mug of boiling water until the volume increases by two or three times.
Then baking in a preheated oven with steam for the first 10 minutes, at a temperature of 200 * 50 minutes.

Buckwheat can be baked on any ripe strong sourdough that is available at the peak of the rise. If in principle you want to try on buckwheat - do this: take any starter and feed 1: 1 with buckwheat flour and water - here you will have buckwheat, if you like it and need it constantly, you can feed it and grow it separately, if not in demand, then in this way we get it at any time, before baking buckwheat.
